How To make Lattice Topped Raspberry Pie
Filling: 5 c Whole raspberries
Fresh or whole frozen; -thawed 1 1/4 c Sugar
5 tb Cornstarch
1 ds Salt
Crust: Pre-made pastry double -crust pie Divided in two balls/chilled 1 tb Butter; cut into pieces
Garnish: Powdered sugar Chocolate leaves 1 Raspberries, if desired
THE DESSERT SHOW SHOW #DS3160 In saucepan, mix together raspberries, sugar, cornstarch and salt. Cook over medium heat. Stir constantly until mixture comes to boil and is thickened. Remove from heat and refrigerate about 1 hour until mixture comes to room temperature. Divided dough in half and roll 1 half to circle and fit into pie plate. Leave overhang of dough. Cover and chill. Preheat oven to 425 degrees. Pour cooled filling into crust. Dot filling with butter pieces. Roll second dough ball out to a circle and cut into strips. Arrange strips in lattice design over top of pie. Trim edges of top and bottom crust and flute. Place pie on baking sheet and bake until golden brown, about 35-45 minutes. Serve garnished with powdered sugar and chocolate leaves and whole berries. -----

Easy RASPBERRY PIE Recipe! Special Old FAMILY Recipe! Uses Frozen Raspberries!
This easy raspberry pie recipe is an old family recipe. We use fozen berries for this pie but you could use fresh. If you use fresh berries then you may have to adjust the amount of cornstarch you need. This is the link to my favorite pie crust recipe:
2lbs frozen raspberries
½ cup sugar
¼ TSP salt
2 TBSP unsalted butter
1-2 TSP vanilla (the more the better!)
5 TBSP cornstarch
¼ cup water
1 unbaked 9” pie crust
Heat oven to 375F. Put frozen berries in a pot and add sugar and salt. Cook on medium heat until berries thaw and start to get hot and juicy. Add butter. Continue cooking until berries are nice and hot and liquidy. It will look like a berry puree. Mix cornstarch with water and add to berries. Cook until nice and thick. Take off heat and add vanilla. Cool a bit. Make sure your pie crust is nice and cold and your oven is preheated. Pour berries into pie crust and put in oven. Cook for about 30 minutes (yours might take more or less time, depends on your crust). The crust will be nicely browned and berries will look set and slightly dry when it’s done. Let cool then place in fridge to cool completely. Serve with whipped cream or ice cream. Enjoy!

One of my favorite summertime desserts! This incredible mixed berry pie recipe is easy to make and perfect for a special occasion or a simple backyard dinner! I make it with my Homemade Pie Crust recipe and fill the inside with blueberries, blackberries and raspberries! The berry filling has just the right amount of sweetness and hint of orange flavor from orange zest. I love to enjoy this pie a la mode with a scoop of vanilla ice cream on top!

For Pie Crust:
2 2/3 cup (334 g) all-purpose flour
1/3 tsp salt
1 cup plus 2 tbsp (255 g) unsalted butter
¼ cup, plus 2 tbsp (90 ml) ice cold water
For Berry Pie:
3 cups (570 g) blueberries
3 cups (375 g) raspberries
2 cups (288 g) blackberries
¾ cup (150 g) white granulated sugar
¼ cup (30 g) cornstarch
¼ cup (31 g) all-purpose flour
1 tsp vanilla extract
1 tbsp (15 ml) lemon juice
Zest from 1 large orange
1 beaten egg, for egg wash
