Baked Zucchini, Vegan Cooking Show by Kyong Weathersby
Now you can enjoy zucchini without deep frying and still have great flavor with nutrition value for you and for your family. Gluten-free and Oil-free.
Baked Zucchini
1 zucchini, sliced 1/2 inch thick
¼ c bread crumbs
¼ c whole wheat flour or brown rice flour
¼ c nutritional yeast flakes
½ tsp salt
1 tsp garlic powder
1 tsp onion powder
½ c soy milk or non-dairy milk
Preheat oven for 400 degrees. Slice zucchini in 1/2 inch thick. Set it aside. In a small bowl, put bread crumbs, whole wheat flour, nutritional yeast flakes, salt, garlic powder and onion powder. Mix well. Put soy milk or non-dairy milk in another bowl. Put parchment paper in a 11” x 14” cookie sheet.
Dip one sliced zucchini in soy milk, then coat it with dry batter mixture and place on cookie sheet. Finish all sliced zucchini in same method. Lightly spray oil on batter zucchini on both sides. Bake for 25 minutes. It should be nice golden brown. Delicious!
