PIZZA ‘CUPCAKES’
????????????????????
(Recipe courtesy of kraft whats cooking)
These are perfect for school lunches. No more pizza days? No problem! These are great to freeze as well and defrost as you need! I make a few batches a month and my kids defrost them on their own in the microwave and pack them for lunch!
PIZZA ‘CUPCAKES’
Makes 12 servings
1 can (391 g) refrigerated pizza crust
24 slices pepperoni, divided
3/4 cup Traditional Pizza Sauce, divided
1-1/2 cups Shredded Mozzarella Cheese, divided
1/4 tsp. dried Italian seasoning
Step 1
Heat oven to 400°F.
Step 2
Unroll pizza dough onto cutting board; cut into 24 equal pieces.
Step 3
Reserve half the dough for later use. Press remaining dough pieces onto bottom and up sides of 12 muffin pan cups sprayed with cooking spray.
Step 4
Fill each cup with 1 pepperoni slice, 1 tsp. pizza sauce and 1 Tbsp. cheese; cover with reserved dough pieces. Press edges of dough in each cup together to seal.
Step 5
Bake 8 to 10 min. or until golden brown. Meanwhile, cut remaining pepperoni slices into quarters.
Step 6
Top 'cupcakes' with remaining cheese and pepperoni; sprinkle with Italian seasoning. Bake 5 min. or until cheese is melted.
Step 7
Serve with remaining pizza sauce.
Enjoy!
