How To make Kentucky Bourbon Pecan Cake
1 lb Butter
3 c All-purpose flour
9 Eggs; separated
2 Jars Red glace cherries; 8 o
-finely chopped 4 c Chopped pecans
2/3 ts Mace
3 c Sugar
1/3 c Bourbon
Grease and flour two loaf pans 9 x 5 x 3. In a large mixing bowl thoroughly beat the butter with 2 cups of the sugar and the mace until light and fluffy. Gradually beat in the egg yolks, stir in 2 3/4 cups of the flour alternately with bourbon. Sprinkle remaining 1/4 cup flour over cherries and toss. Stir into cake batter along with pecans. Beat egg whites until soft peaks form; gradually beat in remaining 1 cup sugar, continue beating until very stiff. Fold into cake batter and turn into pans. Bake 350 for 1 1/4 to 1 1/2 hours or until cake tester comes out clean. Turn out
on wire rack. Turn right side up. Cool well. Wet a cheesecloth in bourbon and wrap around the cake and store in a cool place. Will keep for 1 month Pat Dwigans -----

Kentucky Bourbon Cake
This fabulous cake is as old as The Commonwealth. Kentucky was originally a part of Virginia before being granted statehood and becoming the 15th state of the Union. This recipe came along from Virginia households and holds a place of honor on holiday dessert tables, as well as, the Kentucky Derby gatherings the first weekend in May. This cake is a butter cake versus being a sponge cake, egg white-based cake and so on. During Prohibition it appears the bourbon was deleted from recipes across Kentucky, and replaced with the same amount of butter as well as a copious amount of vanilla extract to color it to look like a bourbon enhanced glaze. It is a cake worth of special occasions.

Betty's Kentucky Bourbon Pecan Cake
Betty demonstrates how to make a traditional Kentucky Bourbon Pecan Cake. This is a defining cake for Kentucky.
Kentucky Bourbon Pecan Cake
2 cups whole red candied cherries
2 cups bourbon whisky (I used Maker's Mark bourbon whisky.)
2 cups white seedless raisins
2 cups softened butter
2 cups sugar
2 cups light brown sugar, firmly packed
8 eggs, separated
5 cups all-purpose flour
4 cups pecan halves
1 ½ teaspoons baking powder
1 teaspoon salt
2 teaspoons ground nutmeg
Combine cherries, raisins, and bourbon in a large mixing bowl. Cover with plastic wrap and let sit in the refrigerator overnight. Drain fruits and reserve bourbon. Place butter in bowl of mixer and beat on medium speed until light and fluffy. Add sugars gradually. Add egg yolks, one at a time, beating well after each addition. Combine ½ cup of the flour with the pecans. Mix the remaining flour with the baking powder, salt, and nutmeg. Add 2 cups of the flour mixture to the creamed mixture and mix thoroughly. Add the reserved bourbon and the remainder of the flour mixture alternately, ending with flour. Beat well after each addition. In a separate bowl, mix egg whites until stiff, but not dry. Fold gently into cake batter. Add drained fruits and floured pecans to the cake batter; blend. Grease a 10-inch tube pan; line with waxed or parchment paper. Pour cake batter into pan with 1 space left at the top. Place in 275-degree (F) oven; bake about 2 to 2 ½ hours, or until a cake tester comes out clean. (Loaves will take less time.) Cool cake 2 to 3 hours in pan. Remove from pan. Wrap in cheesecloth soaked in bourbon and store in aluminum foil inside a covered container for several weeks.
