RECIPES in This Video
Makes enough batter to fill one 8 inch pan
4 ounces of bittersweet chocolate (I use Ghirardelli)
1/2 cup (4 ounces) unsalted butter
4-6 Tablespoons of Bourbon
3 eggs separated
2/3 cups granulated sugar (split)
2/3 cups finely ground Pecans
1/2 cup sifted and then measured cake flour
Glaze:
6 ounces of bittersweet chocolate (I use Ghirardelli)
2 tablespoons and 2 teaspoons of heavy cream
2 tablespoons of unsalted butter
1. Start by melting the chocolate and the butter in a double boiler. ( I am using a bowl over a saucepan in the video)
2. Stir in the Bourbon and set aside to cool.
3. Beat the egg whites with half the sugar (1/3 cup) until stiff ( but not dry)
4. Beat the egg yolks with the other half of the sugar (1/3 cup) until light in color and forms a ribbon. (shown in the video)
5. Put the sifted and then measured cake flour into a bowl and add the finely ground pecans.
6. Fold the chocolate mixture into the egg yolk mixture.
7. Fold the egg whites into the egg yolks and chocolate alternating with the flour mixture.
Pour the batter into the pan and bake at 325 degrees, depending on your oven for about 25 minutes
Cool the cakes for a few minutes and then remove from the pans. I flip them over onto a piece of cardboard. Sprinkle with 2-4 tablespoons of Bourbon (optional)
Once cooled you can glaze your cake. ( you may want to refrigerate or freeze the cake prior to glazing.
Chocolate GLAZE
Melt together 6 ounces of bittersweet or semi sweet chocolate in a double boiler, 2 tablespoons plus 2 teaspoons of heavy cream and 2 tablespoons of unsalted butter.
This would go over really well as a fancy dessert or a birthday cake for a gourmet food lover. Pair it with wine. This would be perfect with whipped cream as a side or even vanilla ice cream.
Have fun with this Kentucky Bourbon cake with chocolate and pecans. Thanks for watching.
