How To make Judy's Choc. Pecan Pie
Judy Garnett 1 1/2 cups Pecan halves
1 Pie crust
unbaked
3 cups Semisweet chocolate
1/4 cup Butter :
or margarine
1 cup Light corn syrup
1/2 cup Sugar
1 teaspoon Vanilla extract
1/4 teaspoon Salt
3 Eggs -- lightly beaten
Place pecan halves in unbaked pastry shell; set aside. Combine semisweet choc. and butter in a med. saucepan; cook over low heat until choc. and butter melt, stirring until mixture is smooth. Remove from heat.Add corn syrup, sugar, vanilla, salt, and beaten eggs to choc. mixture, mixing well. Pour mixture over pecans in pastry shell. Bake at 350 for 1 hour or until knife inserted 1 inch from edge comes out clean.Serve pie warm, or let cool

EASY Pecan Pie Bars (NO Bake, Gluten Free)
Try these deliciously EASY (!!) no bake, gluten free pecan pie bars. They're not overly sweet like the usual pecan pie, yet they're really yummy AND good for you with added flax meal and chia seeds. Enjoy! Judi
Pecan Pie Bars (No Bake)
Gluten and Grain Free
2 tsp flax meal
2 tsp ground chia seeds
Pinch of salt (optional)
1/2 cup chopped dates
2 Tbsp water
1/2 c pecans
2 Tbsp almonds
Place chopped dates in a small bowl. Pour 2 tablespoons of boiling water over dates and allow them to soften for about 5 minutes until most of the water has been absorbed. Alternatively, place chopped dates in a small microwave safe bowl. Add 2 tablespoons tap water. Microwave about 30 seconds, until water has boiled. Remove and allow dates to soften for about 5 minutes until most of the water has been absorbed. Do not drain any remaining water, nor blot the dates dry on a paper towel.
Place all ingredients in a food processor or blender. Process until ingredients are well chopped up and blended.
With a spatula, remove mixture to a large piece of waxed paper or plastic wrap. With spatula, form into a bar shape. Wrap tightly and place in refrigerate overnight to firm up and flavors to blend. Slice into small pieces and enjoy!
Note: This recipe can easily be increased so it can be formed in a loaf pan for larger size service pieces.
