How To make Jolof Rice
1 c Dried black-eyed peas
2 md Eggplants
1 ts Salt
1 1/2 tb Canola oil
2 lg Onions, chopped
3 ts Chopped fresh ginger
2 Jalapeno peppers, roasted,
stems & seeds removed & :
chopped 1 Whole garlic clove
2 Garlic cloves, minced
1 Green bell pepper, chopped
4 lg Tomatoes, chopped
1 1/2 tb Tomato paste
2 ts Cayenne
2 ts Curry powder
Hot pepper to taste, option 1 lb Carrots, chopped
1 1/2 c Long grain brown rice
1/2 lb Green beans, cut into thirds
Soak peas overnight (Mark's note, soaking black-eyed peas before cooking is unnecessary). Simmer in fresh water for 15 minutes. Drain & reserve cooking water. Slice eggplant into rounds 1/2" thick & place in a colander. Sprinkle with salt & let stand 5 minutes. Heat oil in casserole. Brown eggplant with 1 tb chopped onions, 1 tb chopped ginger, 1 jalapeno, whole garlic & bell pepper for 5 minutes. Remove eggplant & set aside. Add remaining onion, ginger, garlic, jalapeno, bean liquid, tomatoes, tomato paste, cayenne, curry powder & pepper sauce. Simmer for 10 minutes. Add peas, carrots & rice. Simmer 5 minutes more. Add green beans, eggplant & simmer another 15 minutes. (Mark's note: 15 minutes for brown rice is far too short a time, allow a good 20 minutes before adding the green beans & eggplant).

Ingredients
- 420g basmati rice
- 3 small tomatoes
- Thumb size knob of ginger
- 1 red capsicum
- 1 scotch bonnet
- 6 cloves of garlic
- 2 red onions, sliced lengthways thin
- 1 tbsp tomato paste
- 4 sprigs of thyme
- 2 bay leafs
- 500ml chicken stock
Method
1. Start by getting a large pot of water on to boil.
2. Next, in a blender blend 1/2 an onion, the red capsicum, 3 cloves of garlic, the knob of ginger and scotch bonnet.
3. In a separate pot, bring the mixture that you just blended to boil and reduce by 2/3.
4. Just before it’s finished reducing, add the curry powder and tomato paste, stir through and cook for 5 more minutes.
5. In a pot of boiling water, season with salt and par-cook your rice for 7 minutes before draining and rinsing under cold water.
6. In a heavy-based pot (with a lid), sweat off the rest of the onions and in the last 3 minutes add the garlic.
7. Remove half of the red onions to use later.
8. Add the reduced capsicum and tomato sauce to the remaining red onions followed by the rice and chicken stock.
9. Give this a stir and place in your bay leaf and thyme.
10. Place this in a 180°c oven with a lid on for 35 minutes.
11. After the 35 minutes, remove from the oven, but do not take the lid off, leave to rest for 15 minutes.
12. After 15 minutes, remove the lid and add the onions that you reserved earlier.
13. Serve with grilled chicken or stewed short ribs like I have.
