How To make Jewelled Fruitcake
2 1/2 c Unsifted flour
1 ts Baking soda
2 Eggs
1 Jar mincemeat; none such
-ready to use 14 oz Sweatened condensed milk
8 oz Green candied cherries
-halved, 1 cup 8 oz Red candied cherries
-halved, 1 cup 6 oz Apricots, dried, chopped
6 oz Candied pineapple; chopped
1 1/2 c Pecans; chopped
Preheat oven to 300. Grease and flour 10-inch tube or fluted tube pan. Combine flour and baking soda. In large bowl, beat eggs, stir in remaining ingredients. Blend in dry ingredients. Pour batter into prepared pan. Bake 1 hour 30 minutes or until wooden pick comes out clean. Cool 10 minutes; remove from pan. Cool -----

Ingredients:
1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder

- lemon swiss roll
- orange or lemon jelly
- 1 can of vanilla custard
- amaretti biscuits
- white chocolate, edible gold balls , 1 tablespoon candied peel
- double cream, 1 teaspoon sugar, a few drops of vanilla extract
- 1 can of mandarin, 2 teaspoon corn flour, 3 tablespoon icing sugar

INGREDIENTS:
-2 cups dried apricot halves (11 ounces)
●2 cups pitted whole dates (12 ounces)
●1 1/2 cups Brazil nuts (8 ounces)
●1 cup red and green candied pineapple, chopped (7 ounces)
●1 cup red and green whole maraschino cherry, drained (12 ounces)
●3/4 cup Gold Medal all-purpose flour
●3/4 cup sugar
●1/2 teaspoon baking powder
●1/2 teaspoon salt
●1 1/2 teaspoons vanilla
●3 eggs
●Light corn syrup, if desired
