Shrimp Pasta With Creamy Spicy Tomato Sauce Recipe | 30 Minute Meal
This recipe can satisfy a number of meal occasions. It's quick and easy so you can prepare it for a weeknight dinner. Yet it's also perfect for casual entertaining as it is packed with flavor and a touch of heat from the Italian herbs and crushed red pepper. Use jumbo shrimp if you want to make it impressive!
Ingredients!
4 oz. large shrimp
Pappardelle pasta
1 tbsp. chicken bouillon
1 tbsp. oil
1 tsp paprika
1 tsp Italian seasoning
1 onion powder
1 tsp garlic powder
1 tsp cayenne pepper
1 tsp Cajun seasoning
2 tbsps. unsalted butter
1 small onion chopped
1/2 tbsp. minced garlic
2-3 tbsps. tomato paste
1 tsp dry pepper flakes
1 tsp Cajun seasoning
1 handful fresh spinach
1 cup heavy cream
1 cup parmesan cheese
salt and pepper to taste

Rosted Vegetable Medley Recipe
You will need:
1 Large sheet pan about 20 x 15 lined or
2 small sheets pan about 13 x 9 lined
Oven preheated at 350 degrees
Cook time about 40 minutes total
Ingredients:
1 large Potato (or Sweet Potato)
1 medium Onion
1 large Red Pepper
1 large Yellow Pepper
1 large Green Pepper
1 large Eggplant (or two small ones)
2 medium Zucchini
2 medium Carrots
2 Celery Stalks
1/4 cup Parmigiano
1/4 cup bread crumbs
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 tsp. oregano
1/2 cup of virgin live oil
Optional :
You can always add or take away any vegetable you might not like and add others , some suggestions are , green beans, asparagus, yellow squash, yellow zucchine, green onion.
Wash all vegetables, in a large bowl place your vegetables that you have cut into about 2 inch pieces, add your salt, pepper, bread crumbs, parmigiano, spices, virgin olive oil, toss these vegetables WELL coating them.
Place vegetables onto your sheet pan or sheet pans lined with aluminium sheets for easy clean up. Use a little cooking spray before adding vegetables.
Do not crowd the vegetable.
Place into a preheated oven at 350 degrees for 20 minutes,
Turning the vegetables well returning to oven for 20 minutes or till the vegetables are roasted and golden in color.
Then enjoy them !

Tomato Basil Chicken & Ziti With BURRATA CHEESE :))
Ziti pasta topped with a fresh Roma tomato sauce, seasoned and cooked chicken, and a Burrata cheese drizzle to finish it off.
PRINTABLE RECIPE:
CHICKEN INGREDIENTS:
4 chicken breasts
1 tablespoon olive oil
1/3 cup flour
1 teaspoon salt
1 teaspoon Mrs. Dash onion & herb seasoning
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon Mrs. Dash Italian Medley
16 ounces ziti pasta, cooked and strained
Burrata cheese
Fresh basil
FRESH TOMATO SAUCE:
12 Roma tomatoes, chopped
3 garlic cloves, minced
3-4 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon black pepper
12 basil leaves, finely chopped
DIRECTIONS:
For the chicken, heat a deep skillet over medium heat, and add the olive oil.
Dip the chicken in flour coating both sides, place in skillet.
Sprinkle the seasonings over the chicken.
Cook 4-5 minutes on each side until fully cooked with no pink in the center.
Cut the chicken into strips, and set aside.
Wipe out the skillet with paper towels, and add a Tbsp of olive oil and the garlic.
Cook 1 minute, then add the tomatoes, salt and pepper.
Mix well, and retain a light boil stirring often for 10-15 minutes until the tomatoes break down.
Keep drizzling 1-2 tsp of olive oil every few mintes.
Add fresh basil and mix well.
To serve the meal, scoop the ziti on a plate, top with fresh tomato sauce, strips of chicken, drizzle 1-2 Tbsp of Burrata cheese, then top with fresh basil.

My version of baked rigatoni is made the southern way, typical to my wife’s region Calabria. Each bite is made up of crispy salami, moist mince, the perfect amount of cheese, homemade sauce and thick pasta tubes. The surprise in this recipe is the egg – once you have tried it, you will ALWAYS add it in.

This is How to Make BAKED ZITI (Pasta al Forno)
INGREDIENTS:
2 x bottles Italian tomato passata (700ml each)
Half an onion
4-5 tablespoons extra virgin olive oil
3 eggs
500g - 17.02oz dry rigatoni pasta
500g - 1lb pork and veal mince (mixed ground pork and veal)
Fresh basil leaves
1 x large Fior di latte mozzarella
1 x large Buffalo mozzarella
50g - 2 oz provolone cheese
100g - 1 cup cups grated pecorino cheese
1 whole calabrese spicy salami
Rock Salt
5L water
Extra virgin olive oil (EVOO)
Ice
METHOD:
1. Baked rigatoni recipes vary all over Italy, mine starts by dicing half an onion into small pieces.
2. Place a large pot on the stove at a medium heat and add 4-5 tablespoons of extra virgin olive oil. Once this has started to warm up, add the finely diced onion and simmer for 6-7 minutes or until they have started to turn a golden brown.
3. Now, add the tomato passata and stir it really well so the onion combines with the sauce. Once it starts to simmer, add a pinch of rock salt.
4. Place the lid on top of the pot and leave the sauce for your baked rigatoni to cook for around 30 minutes, stirring it every so often.
5. While the sauce is cooking, get a medium size fry pan and put it on the stove at a medium heat before drizzling a generous amount of extra virgin olive oil.
6. Add the 500g of mixed pork and veal mince into the pan and let it start to brown while you break it down and spread it out into smaller pieces using a wooden spoon
7. Cover the mince and let this cook for between 6-8 minutes, checking it and stirring it through again after 5 minutes.
8. Once the sauce for your pasta al forno is ready, remove the lid and add some fresh basil leaves to it and stir gently, but really well.
VINCENZO’S PLATE TIP: Don’t cut your basil leaves with a knife! Break them with your hands or you lose some of the aroma and beautiful fresh flavours of this wonderful herb!
9. At this point, your mince and sauce for the pasta al forno are ready! Add two ladles of sauce into the mince and mix through.
10. Now, add a large amount of water to your big pot and bring it to the boil. This will be for the pasta in this delicious baked rigatoni dish.
11. At the same time, fill a small pot with water, bringing it to boil also – then add 3 eggs, and let them cook for 12 – 14 minutes depending on how hard you want them.
12. After 14 minutes, drop the eggs into a bowl of ice water so they stop cooking and don’t go dark in the middle.
13. Once the eggs are ready, start cooking your rigatoni and check the packet instructions for the cooking time.
14. Strain your pasta 3 minutes before the instruction time – otherwise your pasta will overcook
15. While the pasta is cooking, take the eggs out of the ice water bowl, peel them and leave them to the side.
16. Once you have strained the pasta for your baked rigatoni, put it into the pot filled with sauce – not a mixing bowl!!

Spicy Chicken Pasta | Serves 2
????INGREDIENTS????
Chicken:
1x 9oz/250g Chicken Breast, at room temp
2 tsp Olive Oil
1/2 tsp Smoked Paprika
1/2 tsp Cayenne Pepper
1/4 tsp Salt
1/4 tsp Black Pepper
Pasta:
7oz / 200g Linguine (or other long cut pasta)
2/3 cup / 160ml Heavy/Double Cream
1/3 cup / 80ml Chicken Stock
1/4 cup / 60ml Dry White Wine
1oz / 30g Parmesan, finely grated
6 (2oz/60g) Sun Dried Tomatoes, finely diced
2 tbsp Tomato Puree (tomato paste in US)
1 tbsp Butter
1 tbsp Fresh Parsley, finely diced
1 small Onion, finely diced
1 tsp Garlic, minced
1/2 tsp Chilli Flakes
Salt & Pepper, to taste
????METHOD????
In a small bowl, combine 2 tsp olive oil, 1/2 tsp smoked paprika and cayenne pepper, and 1/4 tsp salt and black pepper.
Butterfly your chicken breast right the way through to make 2 even sized breasts. Coat in spicy marinade.
Place in a skillet over medium-high heat and fry for 3mins each side, or until nicely charred and just cooked through the centre (depending on thickness may take more or less time). Place to one side and when ready, slice into thin strips, ensuring you slice against the natural grain of the chicken and at a slight angle.
Turn heat down to medium and melt in 1 tbsp butter, scraping off the flavour from the chicken with a wooden spoon. Add your onion and fry until it begins to soften and pick up colour. Add 1 tsp garlic, fry for 1-2mins longer, then add 1/2 tsp chilli flakes. Fry for 1 min longer, then add sun dried tomatoes. Fry for another minute just to soften them, then pour in 1/4cup/60ml dry white wine. Allow the wine to completely reduce (important to burn off the alcohol, should take 5 or so mins).
Meanwhile, add 7oz/200g pasta to salted boiling water and cook until al dente. Retain a cup of starchy pasta water towards the end of cooking.
Add 2 tbsp tomato puree to the pan. Fry this for 2mins (important to sweeten the taste) then deglaze the pan with 1/3cup/80ml chicken stock. Pour in 2/3cup/160ml heavy/double cream and season to taste with salt & pepper.
Use pasta tongs to add pasta in and toss to combine. Add 1oz/30g freshly grated parmesan, 1 tbsp fresh parsley and your chicken strips. Toss again to coat, using your starchy pasta water to thin out if needed.
