Easy Black Bean Salad with sweet potatoes

FOR THE SALAD
1 cup cooked black beans
1½ pound sweet potatoes peeled and chopped into 1-Inch cubes
1 cup green bell pepper diced
1 medium avocado diced
½ cup corn
½ red onion chopped
¼ cup pickled jalapeños chopped
FOR THE CILANTRO LIME DRESSING
1 cup packed cilantro
⅓ cup extra virgin olive oil
¼ cup lime juice
2 tablespoons maple syrup
½ clove garlic
½ teaspoon grated ginger
½ teaspoon salt

Your Favorite Protein Salad Recipe
Ingredients:
2 small cucumber
½ red onion
8-10 cherry tomatoes
1 tbsp cooking oil
1 can cooked chickpeas
¼ tsp salt
¼ tsp red chili
½ tsp ginger
3 tbsp fresh coriander
2 green chilies
¼ tsp roasted cumin
¼ tsp chaat masala
¼ tsp black salt
2 tbsp lime juice
¼ tsp pepper
1 tsp cooking oil
Instructions:
1. Slice the cucumbers, red onion, and cherry tomatoes
2. Add cooking oil in a pan and add cooked chickpeas
3. Add salt to taste and red chili
4. Saute for 2-3 minute for medium high heat
5. Remove the chickpeas from heat and transfer to the bowl with cucumbers
6. Mix in fresh ginger, coriander, and green chilies
7. Add roasted cumin, black salt, cooking oil, lime juice and a pinch of salt and pepper to taste
8. Ready to enjoy!

Salată de sfeclă la borcan cu castraveți și verdeață proaspătă:
- 300-400 g sfecla la borcan (vezi rețeta:...);
- 1 castravete fabio;
- 1 legătură de pătrunjel verde;
- 1 legătură de mărar proaspăt;
- 1 ceapă roșie mică;
- 3-4 fire de ceapă verde;
- o mână bună de salată verde;
- 1 linguriță de susan negru, opțional;
- 1 linguriță de sare, sau după gust;
- sucul de la o lămâie, sau după gust;
- 25-30 ml ulei de măsline;
- 1/4 linguriță piper, sau după gust;
- 3-4 căței de usturoi;

▶️ QUINOA SALAD RECIPE INGREDIENTS: (3 servings)
???? To cook quinoa:
1/2 Cup / 95g Quinoa - Soaked for 30 minutes
1 cup / 100ml Water
???? Salad Ingredients:
4 cups / 180g Romaine Heart (Lettuce) - Thoroughly rinse with water and pat dry. Thinly shredded 1/2 inch thick
80g / 1/2 cup Cucumber - cut into small pieces
80g / 1/2 cup Carrots - cut into small pieces
80g / 1/2 cup Green Bell Pepper - cut into small pieces
80g / 1/2 cup Red Bell Pepper - cut into small pieces
65g / 1/2 cup Red Onion - chopped
25g / 1/2 cup Parsley - finely chopped
50g / 1/3 cup Kalamata Olives - chopped
???? Salad Dressing Recipe Ingredients:
2 Tablespoon Red Wine Vinegar (???? ADJUST THE VINEGAR TO YOUR TASTE)
2 Tablespoon Olive Oil - (I have used organic cold pressed olive oil)
3/4 to 1 Tablespoon Maple Syrup OR to taste (???? ADJUST THE MAPLE SYRUP TO YOUR TASTE)
1/2 Teaspoon Garlic (3g) - minced
1/2 Teaspoon Dry Oregano
Salt to taste (I have added 1/2 Teaspoon pink Himalayan salt)
1/4 Teaspoon Ground Black pepper
▶️ METHOD:
Thoroughly rinse quinoa until the water runs clear. The soak for 30 minutes. Once soaked strain throughly and transfer to a small pot. Add water, cover and bring to a boil. Then reduce the heat and cook for 10 to 15 minutes or until the quinoa is cooked. Once cooked, right away transfer to a mixing bowl and spread it thin to allow it to cool down.
Rinse the vegetables and lettuce with water and pat dry. Shred the lettuce 1/2 inch thick and chop the remainder of the vegetables. Once the quinoa has cooled down completely, top it with the chopped veggies, cover and chill it in the refrigerator until ready to use. This will keep the vegetables will remain crisp and fresh.
To prepare the salad dressing - Add red wine vinegar, olive oil, maple syrup, minced garlic, salt, dry oregano, black pepper to a small jar. Mix well to combine. Set it aside. ???? ADJUST THE VINEGAR AND MAPLE SYRUP in the salad dressing TO YOUR TASTE.
✅ NOTE: Add the salad dressing little at a time to the salad and taste as you go. Do not add the entire salad dressing at once. Remember you can always add more dressing but cannot remove it once added :)
When ready add the salad dressing and serve.
▶️ IMPORTANT TIPS:
???? Shred the romaine lettuce about 1/2 inch thick
???? Allow the veggies to chill in the refrigerator until ready to use. This will keep the vegetables will remain crisp and fresh

Insalata estiva e salutare con arachidi pronta in 10 minuti
Nella calura estiva, non c'è niente di meglio di una sana insalata estiva con arachidi. È perfetto anche come piatto unico, senza stare davanti ai fornelli.
INGREDIENTI:
insalata verde
insalata rossa
1 cetriolo
1 cipolla
100 g di olive verdi (a vostra scelta)
50 g di prezzemolo
olio d'oliva
succo di limone
sale
pepe
Vediamo insieme come realizzare un'ottima e salutare insalata estiva con le arachidi:
1 passo
Lavate bene l'insalata con acqua corrente in modo che vada via tutta la terra e poi asciugatela con una centrifuga. Una volta essiccate, tagliatele a pezzi e tenetele da parte.
2 passo
Lavate il cetriolo, sbucciatelo e tagliatelo a metà, eliminate i semi e tagliatelo a cubetti.
3 passo
Lavate bene i pomodorini con acqua corrente e tagliateli a metà.
4 passo
Lavate bene la cipolla con acqua, asciugatela e tagliatela a pezzetti.
5 passo
Preparare una ciotola capiente per aggiungere l'insalata verde e rossa, i pomodorini, il cetriolo, la cipolla, le arachidi, il succo di limone e il prezzemolo per insaporire il piatto, sale, pepe, olio d'oliva. Amalgamare bene il tutto e mettere in frigo per circa mezz'ora in modo che tutti i sapori si amalgamano bene. A questo punto lasciate la vostra sana insalata estiva con le arachidi a temperatura ambiente per circa mezz'ora e poi servite.

Ingredients:
1 head Green Leaf Lettuce (or Romaine Lettuce or Iceberg lettuce will work fine too)
1 Red Bell Pepper
1 Green Bell Pepper
½ a Red Onion
1 cup Black Olives
1 cup Grape Tomatoes
½ an English Cucumber
1 cup Feta Cheese cut into small cubes (more for serving)
To make the Dressing:
3 tablespoons Extra Virgin Olive Oil
The Juice and Zest of one Lemon
2 tablespoons chopped fresh Parsley
½ tablespoon dry Oregano
¼ teaspoon minced Garlic
Salt to taste
Ground Black Pepper to taste
