Achari baingan is easy Indian food recipe for home cooking. Achari baingan (pickled eggplant) are also part of my Indian veg lunch recipes. I love them as they are spicy, tangy and super delicious. Enjoy them with roti, paratha or rice.
Here is the quick ingredient list of Achaari baingan:
• For Roasting and Grinding Masala:
•
• Cumin seeds/ jeera: 1tsp,
• Nigella/ kalongi seeds: ½ tsp,
• Fennel seeds/ sauf: ½ tsp and Mustard seeds/ rai: ½ tsp

• For Achari Gravy:
•
• Small baby Eggplants/ Baingan washed: 8-10,
• Large Tomato washed: 2,
• Dry red chilly: 2-3,
• Fennel seeds: ½ tsp,
• Nigella/ kalongi seeds: ½ tsp,
• Mustard seeds: ½ tsp,
• Ginger garlic paste: 1tbsp,
• Turmeric powder/ haldi: ½ tsp,
• Red chilly powder/ lal mirch: 1tsp,
• Coriander/ dhania powder: 2 tsp,
• Oil: 5 tbsp,
• Salt and Water

EASY Spicy Braised Eggplant Recipe
LEARN HOW TO MAKE A VEGAN SPICY CHINESE BRAISED EGGPLANT RECIPE
LAY HO MA!! This eggplant dish is incredibly packed with flavour and reminds me of my childhood. I used to eat this often at the dinner table with a bowl of white fluffy rice. Join me in this episode and learn how to make a vegan Chinese spicy braised eggplant recipe with ease! Let's begin.
Ingredients:
1 large Italian eggplant (or ideally 2 skinny Chinese eggplants)
2 large pieces garlic
3 sticks green onion
2 tbsp cane sugar
1 tbsp rice vinegar
3 tbsp soy sauce
1 tbsp Korean pepper powder (gochugaru)
drizzle of olive oil
1/2 cup water
1 tbsp roasted peanuts
Directions:
1. Slice the eggplant(s) into wedges. Finely chop the garlic. Chop the green onion (keep some of the green part for garnish)
2. Prep the sauce by combining the cane sugar, rice vinegar, soy sauce, and Korean pepper powder
3. Heat up a sauté pan on medium high heat. Drizzle with olive oil
4. Add the eggplant when the pan just starts to smoke. Sear the eggplant as best you can just to get some colour
5. Add the garlic and sauté for 5min, then add the green onion
6. Add the sauce plus the water. Deglaze the pan, then cover and cook on medium for 5min
7. Crush the peanuts in a pestle and mortar
8. Plate the eggplant when cooked. Garnish with the green onion that was set aside and the crushed peanuts

The recipe for Spicy Baby Eggplant, Aubergine or Baingan, is so easy to make it is hard to believe how good it tastes! This mouthwatering dish, is so simple to prepare, a recipe that has been taught to me by my mother Hawa, which I am happy to share!
It is buttery and delicate, and combined with spices it just hits the spot. Its made with a extra garlic, and a delicious spice mix of coriander, cumin, turmeric, masala, and is simmered until the eggplants are tender and done! Scoop it up with roti, naan, or add a spoonful on a toasted slice of bread! Its is a perfect vegetarian and vegan dish.
SPICY BABY EGGPLANT RECIPE
Ingredients:-
1/2 kg Baby Eggplant
1/2 medium Onion
4 to 5 Garlic cloves
1 tsp Coriander powder
1 tsp Cumin Powder
1/2 tsp Garam masala
1/2 tsp Tumeric powder
2 tsp Kashmiri masala (or any other mixed curry masala)
1 tsp Salt (or more according to taste)
3 to 4 tbsp Oil
