Chili Frito Pie Recipe:
2 tablespoons vegetable oil
3 pounds beef chuck, cut into 1/2-inch chunks
2 teaspoons kosher salt
2 teaspoons ground black pepper
3/4 cup plus 1 tablespoon Queen's chili dump (recipe below)
8 ounces tomato sauce
14 ounces beef broth
6 dashes of Tabasco
3/4 cups beer (Beer Chicks used Session Black Lager)
1 large bag Fritos
3 cups sharp yellow cheddar cheese, grated
1.Heat oil in a large heavy bottom pot over medium high heat. Add beef in batches and brown on all sides, season with salt and pepper. Once all the beef is browned, add the spice dump to the beef and cook for 4-5 minutes more. Stir to make sure all the beef is fully coated in the spice dump. Pour in the tomato sauce, beef broth, Tabasco, and beer. Bring to a simmer, cover and continue to cook for 1 1/2 hours or until beef is fork tender. Stir once in a while to prevent chili from burning on the bottom.
2.When ready to serve, fill the bottom of a bowl with Fritos and top with a hearty helping of beef chili. Sprinkle the top with shredded cheese and enjoy!
Serves: 6
Queen's Chili Dump Recipe:
1 1/2 teaspoons cayenne pepper
2 teaspoons garlic powder
2 teaspoons white pepper
2 teaspoons chicken bouillon granules
4 teaspoons beef bouillon granules
4 teaspoons kosher salt
2 tablespoons onion powder
2 tablespoons ground cumin
3/4 cups chili powder
1.Mix all ingredients together. Store in an airtight container for up to 2 months.
Yield: 1 1/2 cups

Death Valley Cottage Pie Recipe:
2 pounds russet potatoes, peeled and cut into chunks
3 tablespoons butter
3/4 cup heavy cream, warmed
2 tablespoons olive oil
1 large yellow onion, diced
3 poblano peppers, diced
2 tablespoons garlic, minced
1 1/2 pounds lean ground beef
1 tablespoon tomato paste
2 teaspoons chipotle in adobo, chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cups tomatoes, seeded and chopped
1 cup corn kernels, fresh cooked or frozen
1 cup black beans, drained and rinsed
4 tablespoons cilantro, chopped
Cooking Spray
1 bag frozen peas, defrosted
1.Place potatoes in a saucepan with cold, salted water to cover. Bring to a boil, reduce to a simmer and cook potatoes until tender, about 30 minutes. Drain potatoes and mash with butter and heavy cream until smooth. Set aside.
2.Heat oil in a large skillet over medium heat. Add onion and poblano peppers and cook for 10 minutes or until softened. Add garlic and cook an additional 2 minutes. Raise heat to medium high and add the ground beef cooking until browned.
3.To the browned beef mixture add tomato paste, chipotle in adobo, chili powder, cumin, salt and pepper. Add the tomatoes and bring to a simmer, cook 15 minutes until the liquid reduces and the mixture thickens. Stir in the corn, beans, cilantro, and remove from heat.
4. Divide the beef mixture among 8 ramekins, filling them all the way to the top.
5.Put mashed potatoes into a piping bag fitted with a large, round tip. Pipe mashed potatoes in the shape of a ghost on top of each ramekin. Garnish with peas for eyes.

Cheesy Ground Beef & Potato Casserole Recipe
INGREDIENTS:
1 1/2 to 2 pds ground beef
5-6 small to medium sized sliced yellow flesh potatoes - approx 1/8 thick
You can use Yukon Gold or Russet potatoes
1 cup finely diced onions
3/4 cup finely diced bell peppers
1/2 cup finely diced carrots
1 cup frozen peas
1 tsp. minced garlic
8 oz. grated cheddar and colby jack cheese
Sauce:
2 cans cream of mushroom soup
1 cup milk
1/2 to 3/4 cup sour cream
1/4 tsp. salt
1/4 tsp. black pepper
1 tsp. garlic powder
1/4 tsp. onion powder
Preheat oven 350 degrees Farenheit.
In skillet on medium high heat brown and chop ground beef until no longer pink.
Add onions, bell peppers, carrots, peas and minced garlic.
Cook and stir for 2-3 minutes and turn off heat and set to the side.
In a greased 9x13 pan put down a layer of sliced potatoes. Overlap a little and cover the bottom.
Separate meat/veggie mixture in half and sprinkle half on top of potatoes.
Pour half of sauce over the meat and spread out as best you can.
Sprinkle half of grated cheese over the sauce.
Repeat layers of potatoes, meat/veggie mixture and sauce.
Cover and bake for 1 hour at 350 degrees farenheit.
Remove cover and top with rest of grated cheese.
Bake uncovered for 30-40 minutes or until cheese is melted and potatoes are tender.
Let rest for 20 minutes before cutting and serving.
Enjoy.

Hamburger Casserole. 100 year old recipe. This video had to be re-uploaded! In this video I'll be whipping up a simple, one pot dish that is perfect for any weeknight dinner. The variations are virtually endless. It's easy a, affordable and delicious. You can make it with the ingredients that you already have on hand. No need for a shopping trip in a specialty food store. This is the kind of meal that I grew up on, and I raised my 4 kids on.
Ingredients:
1 lb. of lean ground beef
1 cup of chopped onions
4 cups of diced potatoes
1 cup of milk
Salt & pepper to taste
4 ounces of Provolone cheese (or any cheese that you prefer)
1 teaspoon of corn starch to thicken
**Optional - 1 cup of chopped green bell peppers

Deep Dish Pizza
4 tablespoons olive oil, divided
1 pound hot Italian sausage, casings removed
1 cup onion, finely chopped
1/2 cup green bell pepper, diced
1 teaspoon red pepper flakes
8 ounces button mushrooms, sliced
3 garlic cloves, minced
1 tablespoon tomato paste
1 16-ounce can tomato sauce
1 teaspoon dried oregano
1/2 teaspoon fennel seeds, crushed
Cooking Spray
1 pound store bought pizza dough
12 ounces mozzarella cheese, 8-ounces sliced, 4-ounces shredded
1/2 cup Parmesan cheese
1.Preheat oven to 400 degrees.
2.Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the sausage and break up into large chunks. When the sausage is beginning to brown add the onion, green bell peppers and red pepper flakes. Cook until the vegetables are tender and the sausage is browned. Remove from skillet and set aside.
3.Return the skillet to medium-high heat and add the mushrooms. Cook until excess moisture evaporates and the mushrooms brown. Reserve.
4.In a saucepan heat 1 tablespoon of olive oil over medium-high heat. Add the garlic and cook 1 minute. Stir in the tomato paste, tomato sauce, oregano and fennel. Reduce the heat to a simmer and cook 10-15 minutes or until the sauce thickens.
5.Grease a 9x13-inch baking dish with cooking spray. Place the pizza dough in the dish and gently press the dough with your hands evenly over the bottom of the dish and halfway up the sides. Drizzle dough with 1 tablespoon of olive oil. Spoon one even layer of sausage over the dough. Top with a layer of mushrooms, mozzarella slices and the tomato sauce. Sprinkle the casserole with shredded mozzarella and Parmesan cheese. Bake in the oven for 30-35 minutes or until the bottom of the crust is golden brown and the cheese is bubbling.
Serves 6-8
