Collard Greens Southern Style Cooked With Hog Jowls

Collard Greens Southern Style
Ingredients:
1 bunch fresh collard greens
8 slices hog jowls (or bacon slices)
32 oz chicken broth
4 cups water
1 chicken bullion
2 tbsp brown sugar
1 tbsp minced garlic
1 tsp onion flakes
¼ tsp red pepper flakes
¼ tsp black pepper
Salt to taste
Directions:
Wash and clean collard greens very thoroughly.
Cut into small pieces
Cook 4 slices of hog jowls to render the grease for seasoning
Remove the hog jowls leaving the grease in the pot
Add chicken broth slowly
Add water,chicken bullion, brown sugar, garlic, onion flakes, red pepper flakes, black pepper and salt
Add the collard greens to the pot and heat until they start to wilt.
Slice 4 pieces of hog jowls into short pieces and add to the greens.
Bring to a simmer and cook covered for 2 hours.
Serve and Enjoy !!!

Southern Style Collard Greens: Soul food 101
Try this recipe with mixed greens...wonderful
INGREDIENTS
*2 Tbsp bacon fat, lard or vegetable oil
*1 medium onion, sliced from root to tip
*1 ham hock or pork jowl bacon, fat back
*2 garlic cloves, smashed
*1 quart chicken broth
*1-2 cups water
*2 tablespoons sugar, or more
*1 tablespoons cajun spice seasoning
*2 teaspoons black pepper
*1 teaspoon salt
*8-10 cups chopped collard greens, about 2 pounds
*Vinegar and hot sauce to taste
Direction:
Heat the bacon fat in a large pot set over medium-high heat. Sauté the onion and garlic in the bacon fat, stirring often, until the edges begin to brown, about 5 minutes. Add the ham hock, chicken stock add cajun seasoning, black pepper, salt, sugar, bring to a simmer. Cover and cook for 1 hour. fish out the ham hock, pull the meat off the bones and chop.
2 Add the collard greens to the pot and along with the chop meat, and water...cover and cook until tender, another 45 minutes to an hour.
3 To serve, serve with vinegar and hot sauce at the table....enjoy.
