Chocolate Chip Treasure Cookies

Makes about 3 dozen / 180 Calories per cookie
INGREDIENTS
1 1/2 c graham cracker crumbs
1/2 c all purpose flour
2 tsp baking powder
1 (14 oz.) can sweetened condensed milk (I use Eagle Brand)
1/2 cup or 1 stick of butter, softened
1 1/3 c flaked coconut (I added 1 1/2c)
2 c semi-sweet chocolate chips (I added 1 c)
1 c chopped walnuts (I added 1 1/2c)
* you can omit or substitute walnuts in case of any nut allergy also instead of chocolate chips you can use raisins. You can use gluten-free flour.
INSTRUCTIONS
• Heat oven to 375°F. Combine gram cracker crumbs, flour and baking powder in a small bowl.
• Beat sweetened condensed milk and softened butter in a large bowl until smooth.
• Add crumb mixture; mix well. Stir in coconut, chocolate chips and walnuts. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
• Bake 8 to 10 minutes or until lightly browned. Let cool. I left mine for 15 minutes. But every oven is different.

Holiday Baking 2012: Chocolate Chip Cookies
I decided to post a mini baking series to accompany my holiday prep series this year. I've received so many requests to post this recipe I knew it had to be part of my first (hopefully annual!) Holiday Baking series. I make these chocolate chip cookies for most ever holiday & every family gathering as take home goodies. I'm sure your family will love it, too! Chocolate Chip Cookies
Chocolate Chip Cookies
Note: Recipe adapted from Martha Stewart Living Magazine Holiday Cookies 2005
Makes about 42 cookies
2 ¼ cups all-purpose flour
½ teaspoon baking powder
1 cup unsalted butter, room temperature
½ cup granulated sugar
1 cup packed light brown sugar
1 teaspoon salt
2 teaspoons pure vanilla extract
2 large eggs
1 cup semisweet chocolate chips
1 cup m&ms
Preheat oven to 350°. Place racks in the center of oven
Whisk together flour, baking powder, and salt and set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars, beating on medium speed until light and fluffy. Add the eggs, one at a time, followed by the vanilla. Reduce speed to low. Add the flour mixture a little bit at a time, mixing until just combined. Stir in the chocolate chips and m&ms.
Use a 1 ¾ diameter cookie scoop to measure out dough and place on parchment lined baking sheets, about 2 inches apart.
Bake for 7-8 minutes, rotate cookie sheets, and then bake an additional 7 to 8 minutes until cookies are golden around the edges, but still soft in the center. Remove from oven, and let cool on baking sheets for 5 minutes before transferring to wire racks. Allow 1-2 hours to cool completely. Store cookies in an airtight container at room temperature.

Treasure Chest Cake
Ingredients:
-12, 14 vanilla cake (
-Blue and white buttercream (
-Edible jewels and gems
-Candy, chocolate (gold coins, gummies, etc)
-Graham cracker crumbs
-White, tan, green fondant
-Edible candy rocks
-Kit Kat bars
-Melted chocolate
-Sea life mold. Get it here
-Yellow small candies
Procedure:
1.Prepare cakes. Cut a hole in the center of the larger cake, and fill with candies, jewels and gems.
2.Spread blue buttercream on the top of the larger cake, avoiding the hole in the center and over the sides.
3.Place the smaller cake on top of the blue buttercream and cover in white buttercream. Before the buttercream crusts cover the icing with graham cracker crumbs.
4.In a piping bag fitted with a 125 (large petal tip) pipe waves over the bottom blue portion of the cake. Line the crest of the waves with white icing and brush out with a paint brush.
5.Marble white and ivory fondant together and press into sea life mold cavities. Roll out green fondant into small ropes and wrap around a round thin tool to curve.
6.Place fondant items onto the base of cake with additional buttercream and some of the rocks.
7.Build the treasure chest out of kit kats by gluing the segments together with melted chocolate.
8.Place yellow candies for the handle and details on metal straps, which can be made with dark chocolate. Allow to harden completely.
9.Place the treasure chest on top of the cake, and fill with the candies, gummies, jewels and gems.
Cut cake open to reveal the buried treasure inside the cake!
