-1/2 cup water 20 g Gum arabic; optional
1 tb Saffron stamens
1/2 lb Smen; seasoned butter
1 tb Cinnamon, ground
1 qt Vegetable oil
1 qt Vegetable oil; for frying
10 lb Honey
"This recipe is frankly for historical purposes as its yield indicates suitability for commercial or restaurant production rather than home baking. With unusual proportions of butter, oil and honey in the batter, yeast for rising and more oil for frying, making the cookies would be rather daunting were it not for the fact that they help glorify a particularly holy celebration." 1. In a food processor process all the ingredients,
except the honey, into a paste. 2. Take a walnut-sized piece of paste and roll it out
very thin. Using a metal cut-out typically found in Morocco, with different designs, cut out cookies and let them rise for 15 minutes. Deep-fry the cookies in the remaining quart of oil in batches over low heat just to brown. 3. Soak the cookies in the honey for 15 minutes.

Bonjour à tous j'espère que vous allez bien, je partage avec vous aujourd'hui la recette de la Chebakia, un gâteau au mièl traditionnel bien parfumé à l'eau de fleur d'oranger cannelle et divers saveurs orientale de graines de sésames d'anis de fenouil d'amande..Un délicieux gâteau au mièl qu'on sert spécialement sur toutes les tables marocaine durant le mois sacré du Ramadan en accompagnement avec la célèbre soupe Lahrira et les dattes,au cours de cette vidéo je vais vous montrer plus de détails pour vous faciliter la réalisation surtout pour les débutantes. Les ingrédients
500g farine du blé tendre de bonne qualitée
100g graines de sésames moulus
50g graines d'amandes moulus
1càs d'anis moulus
pc de cannelle
Demi Pc gomme d'arabique mixer avec le sucre
Pincée de sel
4g levure chimique
un pointe de levure boulangère
1càs de vinaigre incolore
100ml d'eau de fleur d'oranger dans lequel j'ai mis quelques pesti de safran
100ml mélange de beurre noisette et huile de tournesol
L'eau tiède selon le besoin environ 90ml
Huile de tournesol pour la friture
500g du mièl pour tromper les gâteaux recette:
50g Sésames grillés pour saupoudrer

Ingredients: 500 g Plain flour 125 g wholemeal flour 125 g sesame seeds, toasted and finely ground 2 tsp. saffron heated in a pan and ground Egg yolk 1tsp Salt 1 tsp ground fennel seed 1 tsp Cinnamon 10 tbsps. olive oil 7 tbsp of vinegar 6 tbsps. of melted butter 8 tbsp orange blossom water 1/2 baking powder 1 cup of water to form a dough oil for frying 1kg honey 1bsp of orange blossom water

500 غرام دقيق ابيض
125 غرام دقيق القمح
125 غ سمسم محمر و مدقوق
ملعقتان صغيرتان زعفران مسخن و محكوك باليد
اصفر بيضة
ملعقة صغيرة ملح
ملعقة صغيرة من النافع المدقوق
ملعقة صغيرة قرفة
10 ملاعق كبيرة زيت زيتون
7 ملاعق كبيرة من الخل
6 ملاعق كبيرة زبدة مدابة
8 ملاعق كبيرة ماء الزهر
نصف ملعقة صغيرة بايكنغ باودر
1 كوب من الماء لتشكيل عجينة
زيت للقلي
كيلو عسل
ملعقة كبيرة من الزهر
Les Igredients:
500 g de farine
125 g de farine complète
125 g de graines de sésame, rôties et finement broyées
2 tsps. safran chauffé dans une casserole et broyé
Jaune d'oeuf
1 c. à thé de sel
1 c. à thé de graines de fenouil moulues
1 c. à thé de cannelle
10 c. à soupe. huile d’olive
7 c. à soupe de vinaigre
6 c. à soupe. de beurre fondu
8 c. à soupe d’eau de fleur d'orange
1/2 poudre à pâte
1 tasse d’eau pour former une pâte
oil pour la friture
1kg de miel
1 cuillère à soupe d'eau de fleur d'oranger

Moroccan Sweet Chebakia Process and Preparation
Halwa Chebakia (sometimes spelled chebbakia or shebakia) is a Moroccan sesame cookie which is shaped into a flower, fried and then coated with honey. Also known as mkharka, it's usually served during Ramadan and for special occasions.
Chebakia is time-consuming to make. Most Moroccan women enlist the help of a sister, mother or friend for the preparation of a large quantity.
This is my sister-in-law's recipe. I've reduced her normal quantities by half to make the batch more manageable for those that cooking alone.
MOROCCAN CHEBAKIA !!!! WITH RECIPE / Ikrame.bouu /
Ingredients:
1 kilo of flour
250 grams of melted margarine
1.8 kilos of honey
10 grams of yeast
175 grams of almonds finely ground
75 grams of walnuts finely ground
10 grams of fresh yeast
75 grams of vinegar
175 grams of water
150 grams of sunflower oil
Sesame seed
1 tablespoon of fennel seeds
2 tablespoons of aniseed
1 teaspoon of cinnamon
1 teaspoon of salt
sunflower oil for frying.

Ingrediënten:
1 kilo bloem
250 gram gesmolten margarine
1,8 kilo honing
10 gram gist
175 gram amandelen fijn gemalen
75 gram walnoten fijn gemalen
10 gram verse gist
75 gram azijn
175 gram water
150 gram zonnebloemolie
sesamzaad
1 eetlepel venkelzaad
2 eetlepels anijszaad
1 theelepel kaneel
1 theelepel zout
zonnebloemolie om in te bakken.

Halwa Chebakia/Mkharka, is a Moroccan sesame cookies with honey which is shaped into a flower, fried and then coated with honey. Chebakia is a pastry of Moroccan origin made of strips of dough rolled to resemble a rose, deep fried until golden, coated with honey, then sprinkled with roasted sesame seeds. It’s a must sweet treat in all Moroccan tables during the month of Ramadan. Chebakia is served alongside a bowl of the Moroccan Harira soup while breaking the fast. They are packed with so many and delicious ingredients and wonderfully fragrant.

INGREDIENTS:
Dough Ingredients:
500 grams (4 cups) all purpose flour
1 cup sesame seeds (roasted and mix until it becomes a smooth paste)
1 cup raw almonds (roasted and mix until becomes a smooth paste)
4 Arabic gum pebbles and 1 Tbsp sugar (grind until you get a powder)
A large pinch of saffron threads
¾ cup orange blossom water
1 ½ Tbsp white vinegar
1 ½ tsp ground cinnamon
1 ½ ground fennel
1 ½ tsp roasted ground anise
1 ½ tsp baking powder
¼ tsp salt
½ vegetable oil
½ unsalted melted butter (melt the butter over low heat until it turns to a brown color and remove the white foam forms on top)
½ cup to ¾ cup lukewarm water
Cooking Ingredients:
Vegetable oil for frying (about 2 cups)
2 cup good quality honey (use organic if you can), 1 Tbsp Arabic gum powder, and 1 ½ Tbsp orange blossom water)
Garnish: a handful of toasted sesame seeds

Notes:
- Let the Chabakia Flower dry over a baking sheet or a large trail for 2 hours before cooking.
- Let the Chabakia absorb the honey for 1 to 2 hours.
- Let the Chabakia cool completely before placing them into an airtight container.
- Store the Chabakia at room temperature for up to 1 month, as you can store it in the freezer for up to 6 month.
