beef, ground, lean

egg

bread, crumbs, dried
MUSHROOM FILLING:
12
oz
mushrooms, canned, pieces, drained
1/4-1/2
teaspoon
basil
1
salt, to taste
Directions:
Mix ingredients together and divide into 4 sections. Make a giant hamburger with each section. Place 1/4 mushroom mixture on half of each hamburger, leaving a 1-inch edge. Fold meat over filling and firmly seal the edges with a fork. Broil about 10 minutes, turning meat only once.
Serves 4.

These flaky beef turnovers will make your mouth water. Beef turnovers (Buljona pīrādziņi, literally “broth pies”) are so delicious and moist. They are so delicate and can be enjoyed hot (with a cup of broth) or cold (as a snack). Back in Latvia they would be available in any bakery and street-side shop. The recipe can be simplified by replacing steak with mince. The perfect pastry for all meals!

230g ground beef
1 egg
salt to taste
black pepper to taste
paprika
mix well
50g chopped onion
15g green onion
15ml olive oil
Mix well
Tortilla(23cm)
Fold and unfold the tortilla in half
Take some of the meat fillings
Put the filling on the tortilla
Spread the beef on half of the tortilla evenly
Sprinkle some mozzarella cheese
Fold the tortilla in half
Tortilla(17cm)
You can also make it with smaller tortillas
Fold than unfold in quarters
Cut the tortilla like this
Spread the beef filling on 3/4 of the tortilla like this
Fold the tortilla like this
Repeat

Medium-low heat
Olive oil
Spread the oil every in the pan
Fry the tortilla for 5 minutes
Flip and fry for another 5 minutes
The color should be golden brown
Done!

Add some olive oil to the pan
Place the small tortillas in the pan
Fry for 5 minutes
Brush oil on top
Flip then fry for 8 minutes
Add 1tbsp water in the pan
Done!

Phylo Beef Turnovers

Makes 12:
1 recipe Basic Meat Sauce, very thick
1 and 1/2 pounds phyllo, thawed and at room temperature
1/2 pound unsalted butter, melted
mozzarella cheese cut into chunks
Preheat the oven to 350 degrees Fahrenheit, 177 degrees Celsius.
Cut the phyllo in half while it is still in the package.
Keep a lightly damp towel with a dry kitchen towel handy to keep the phyllo covered so that it does not dry out and crumble. Cover the phyllo first with the dry towel and then with the damp towel.
Layer four strips of phyllo drizzling each layer with some melted butter.
Place a heaping tablespoon of the meat sauce on the bottom and top with a few chunks of mozzarella. Fold flag style and place on a baking sheet lined with parchment paper.
Continue to do this until all of the meat sauce and phyllo is finished. This batch makes about 12 large turnovers. You can also make these small appetizer sized like my Tiropita/Cheese Pie recipe.
Brush the top of each turnover with the melted butter.
Bake for 25-30 minutes or until golden and crisp.
These freeze beautifully and are great to have ready to bake. To freeze, do not bake them. Place them onto a baking sheet and wrap with plastic wrap.
When ready to bake, preheat oven to 350 degrees Fahrenheit, 177 degrees Celsius. Place as many turnovers as you want to serve onto a baking tray lined with parchment paper. Cover with foil. bake covered for 30 minutes. Remove foil and bake uncovered for an additional 15 minutes or until golden and crisp.
Serve these with a nice soup or salad or as is with a side of Tzatziki Sauce.
