How To make Grilled Fillets
2 tbsps balsamic vinegar
2 tbsps lemon juice
at room temperature
1 tbsp olive oil
4 cloves garlic :
crushed
1 tbsp ginger
1/8 tsp white pepper
4 5 oz fish fillets
In a shallow glass casserole dish, combine vinegar, lemon juice, oil, garlic, ginger, and pepper. Add fillets; turn to coat with marinade. Cover and refrigerate at least 2 hours, turning occasionally. Spray grill with cooking spray. Preheat grill. Drain and discard any remaining marinade. Grill fillets 4 minutes on each side, until cooked through.

For this recipe I started with two 12oz filets. This Filet Mignon recipe is about keeping the seasoning simple and adding flavor on the back end by melting steak butter over the top of the Filet Mignon.
Here’s the recipe for the Filet Mignon steak butter:
- 2 Sticks of Butter room temperature
- 4-5 Cloves Roasted Garlic smashed
- 1 Tablespoon Shallot (minced)
- 1 teaspoon fresh Thyme chopped fine
- 1 teaspoon fresh Sage chopped fine
- 1 teaspoon fresh Rosemary chopped fine
- 2 teaspoons Kosher Salt and
- 1 teaspoon Cracked Black Pepper
Place the butter in a mixing bowl and add the garlic, thyme, rosemary, sage, salt, & pepper. Use a fork to incorporate the ingredients and spoon the mixture into a small bowl packed tightly. Cover with plastic wrap and place in the refrigerator for 2 hours.
For Cooking the Filet Mignon steaks:
Drizzle the Filets with Olive Oil and rub on all sides. Sprinkle a pinch of course Kosher Salt and Cracked Black Pepper over the olive oil and let the Filet Mignon steaks sit out for a few minutes while you build a fire.
In the Big Green Egg I use a bed of Lump charcoal and set the vents wide open. These grills can do temps upwards of 700 degrees. I’m talking screaming hot here, so be careful. This cook is all about searing the outside of the steak fast and then shutting the cooker down so the temp drops to finish off the inside of the steak.
Once the temperature gauge hits 650 degrees it’s time to start grilling. With any ceramic grill crack the lid about 1” and wait for a couple seconds before opening. Trust me the heat will take all of the hair off your arm if you’re not careful.
Place the Filets on the grill grate and close the lid. Set a timer for 1 minute then rotate the Filet Mignon steaks a quarter turn. After another minute, carefully open the lid and flip the Filet Mignon steaks over. Set the timer for 1 minute and repeat the process. Total cook time for this portion is 4 minutes.
Immediately close all vents on the cooker after the first 4 minutes and set the timer for 3 ½ minutes. You should see the grill temperature gradually start to drop once air is cut off.
When there’s about 1 ½ minutes left on the timer, Place a heaping Tablespoon of Filet Mignon Steak Butter on top of each filet. I like to keep the butter really cold in the refrigerator before placing it on the steaks so it doesn’t immediately run off.
When the final 3 ½ minutes is up, the filets will be right at medium rare. If you like your steak a little more or less done just adjust the time a touch.
As always you need to give the steaks a rest for 5-10 minutes. At this point they’re ready to serve.

Today I’m sharing my easy pan seared tilapia recipe! This recipe will give you fish that is crispy on the outside and perfectly flaky and delicious on the inside! Cook my tilapia recipe on a weeknight for a quick, delicious and easy dinner!

INGREDIENTS:
2 large tilapia fillets
1 tbsp olive oil
2 tbsp butter
2 garlic cloves
1/4 lemon
Parsley for garnish
Dry Batter:
2 tbsp all purpose flour
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp red chilli flakes
1/2 tsp dried oregano
1/4 tsp dried thyme
METHOD:
1. Clean and pat dry 2 large tilapia fillets. Sprinkle with a pinch of salt and set aside for 5 mins
2. In a plate, mix all the ingredients mentioned under dry batter. Coat the fish on both sides with the dry batter and gently shake off excess
3. On low flame, heat 1 tbsp olive oil in a skillet/wide pan and infuse it with 2 crushed garlic cloves. Once the garlic starts to brown, remove it from the pan. This way we get a subtle garlic flavor in the dish
4. Next melt 2 tbsp butter in the oil. If using salted, don't add salt to the dry batter or it might end up too salty
5. Set flame to medium and gently place the fish. Fry for 3-4 mins per side. Be careful while flipping as it can break easily
6. Once the fish is done, squeeze the juice of 1/4 lemon all over and garnish with fresh parsley
7. Serve these delicious pan fried Tilapia fillets with sautéed veggies or a salad

TIPS:
• Be careful while flipping the fish as it can break
• Adding lemon juice at the end helps cut the richness of the butter
• Store leftover dry batter in an airtight container in the freezer and use it the next time you make this recipe

How To Grill a Filet Mignon
The filet mignon is a tender, decadent steak cut – the ultimate in steak luxury. It’s simple to grill a perfect filet mignon in just five steps for an incredible steak dinner at your next backyard barbecue. Follow these instructions from our executive chef team to cook a juicy and incredibly tender filet mignon on your gas or charcoal grill every time.
How to Grill a Filet Mignon
1. Thaw filet mignon and allow to come room temperature.
2. Pat steaks dry and season with coarse sea salt and black pepper or Omaha Steaks signature seasoning.
3. Preheat grill to medium-high heat. Clean and oil grill grates.
4. Place filet mignon directly over heat source. Use Omaha Steaks app with cooking time for cook times. Allow 60% of the cooking time on the first side before flipping. Grill to 5 degrees your target temperature.
5. Remove and rest steak under tented foil for 5-10 minutes to allow the juices to redistribute for an incredibly juicy and tender filet mignon.
