Fajitas Kill It & grill It style
ONE ingredient that makes fajitas tender is pineapple juice.
Store-bought fajita seasonings usually contain enzymes that help tenderize the meat. So to get the same tenderizing effect without any weird ingredients, we use pineapple juice.
The other ingredients are simple! A little lime juice, some Worcestershire sauce, Soy Sauce, Fish Sauce, garlic, chili powder, Hungarian paprika, Cumin, a little olive oil, chopped cilantro, and a little salt and pepper. That is it!
Combine the ingredients for the marinade and let marinate for at least 4 hours or overnight. The longer you let them sit, the tastier they are.

You can use flank or skirt steak. Today, I am making fajitas using tri-tip.
Reserve 1/2 cup of marinade. (Veggies)
For best results, marinade tri-tip overnight, but no longer than 24 hours. You want flavors to penetrate the entire pieces of meat and infuse flavor evenly throughout the meat.
*I grilled the tri-tip 350-400f for 35-45 mins on Traeger, flipping 3 times through the process, internal temperature should reaches 130F.
*Smoke Tri-tip on Traeger (Option):
Set the Traeger temperature to 225℉ and preheat with the lid closed for 15 minutes. (Use Super Smoke, if available)
Insert the probe into the thickest part of the tri-tip. Place it on the grill and cook it with lid closed until the internal temperature reaches 130℉, about 60-90 min.
Then, remove tri-tip from the grill, cover with foil. Increase the temp to 450 and preheat for 10 min. Take off the foil from tri-tip, place it on the grill and sear each side for 5 min. Remove it from the grill, cover with foil and let it rest for 10-15min.
Next, Slice against the grain into Serve cooked tri-tip on a warm tortilla roasted veggies. Top it with sour cream, Avocado, jalapeño, cilantro, lettuce, shredded cheese, lime, Pico De Gallo. Check out my video on how to make Pico DE Gallo!!????????
Ingredients:
3 bell peppers (green, yellow, red)
1 White or sweet onion
2 pounds Tri- tip Steak
Marinade:
1 tbsp Chili power
1 tbsp Garlic powder
1 tbsp Onion powder
1/2 tsp Cumin powder
1/2 tsp oregano
1 tsp black pepper
1, 1/3 tsp salt
2 limes (juiced)
3 tsp honey
1 tbsp honey mustard
5 tbsp Worcestershire sauce
1/4 cup olive oil

In a large bowl:
1/4 cup soy sauce
2-3 oranges juiced
2-3 limes juiced
2-3 Tbs olive oil
5-6 cloves minced garlic
Handful of cilantro
1-2 tsp cumin
1 heft Tbs chili powder
Pinch of salt
Mix well and add your 1.5-2 flank steak or preferred steak of choice.
I would recommend marinating 4-6 hours or overnight!
Cook your preferred way pan, grill or air-fryer
I love these with corn tortillas and some onion and cilantro with an extra squeeze of lime!

Today I made Skirt Steak Fajitas On A Weber Kettle Grill Using A Weber Cast Iron Wok! First I grilled the skirt steak on the grill, then I cut it up and added it to the grilled peppers to finish cooking and these fajitas were so delicious! You will find the fajita marinade and fajita seasoning ingredients below. I used 2.8lbs of skirt steak.
Marinade:
1 Bunch of Cilantro diced
2 Tbsp Dried Minced Onion or 1/2 diced onion
1 Orange or substitute about 1/2 cup orange juice
1 Lime
3/4 Cup Olive Oil
1 Tbsp New Mexico Red Chili Powder or your favorite
1 Tbsp Red Wine Vinegar
1 Tbsp Granulated Garlic or Cloves diced
1 tsp Salt
1 tsp Pepper
1 tsp Cumin
1 tsp Mexican Oregano or Regular
Fajita Seasoning:
2 TBSP chili powder
1 TBSP paprika
1/2 TBSP ground cumin
1/2 TBSP garlic powder
1/2 TBSP onion powder
1 TBSP dried oregano
1 TBSP salt
1 TBSP sugar - optional
1/2 teaspoon cayenne pepper

INGREDIENTS
2 lbs thinly sliced sirloin tip steaks
1 yellow onion (sliced into strips)
1 green bell pepper (sliced into strips)
1 red bell pepper (sliced into strips)
2 cups colby jack cheese (shredded)
FOR THE MARINADE
½ cup fresh lime juice (about 4 limes)
¼ cup olive oil
6 cloves garlic (finely diced)
2 teaspoons salt
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon black pepper
½ teaspoon cayenne pepper
INSTRUCTIONS
Marinade the steak. Combine all of the ingredients for the marinade in a large zip top bag or other container. Add the steak to the marinade and stir well to be sure the marinade in covering all of the slices. Allow the steak to marinate in the refrigerator for at least 2 hours or up to 4.
Grill the vegetables. Preheat your grill to medium high heat (about 400 degrees F). Place the onions and peppers in a grill basket and grill for 5-6 minutes, or until the edges of the onions are starting to brown and the peppers begin to soften.
Assemble the roll ups. While the vegetables are grilling, remove the steak from the marinade and shake off any excess. Lay the steaks flat on a large work surface and top each with about 1/3 cup of the shredded cheese. Remove the vegetables from the grill (leave the grill on) and divide evenly among each of the roll ups. Roll each steak around the cheese and vegetables and secure each roll with a toothpick.
Grill the Roll Ups. Place each steak roll on the grill, seam side down, and grill for 3-4 minutes per side (about 12-15 minutes total.
Rest and serve. Remove from the grill and allow the steak rolls to rest for 4-5 minutes before serving with your favorite fajita toppings and sides.
