Ingredients:
1. Sliced green Tomatoes - 2 cups
2. Sliced Onions - 4 1/2 cups
3. Celery Seeds - 1 tsp
4. Green pepper - 1 pc seed removed and diced
5. Turmeric - 1/2 tsp (3ml)
6. Mustard seeds - 1/2 tsp (3ml)
7.Salt - 1/4 cup
8. White sugar - 3 cups
9. White vinegar or apple cider vinegar - 3 cups
Preparations:
1. Place sliced tomatoes, sliced onions and green pepper in layers in a deep enamel or glass dish.
2. Sprinkle 2 tbsp salt on alternate layers. Let it stand overnight.
3. Drain and set it aside.
4. Mix celery seed, mustard seed, vinegar, sugar and turmeric into a preserving pot. Place on heat and bring to boil.
5. Add drained tomato mixture to the vinegar syrup. Reduce heat to medium-low and cook for about 1 1/4 hours until vegetables are transparent and syrup is reduced to just cover the vegetables.
6. Pour mixture into hot sterilized pint jars and seal.

FERMENTED green TOMATO PICKLES ~ healthy, tasty foods
Green tomatoes make one of the crunchiest pickles. All it takes is salt and water, to turn these late season guys into a healthy, gut friendly treat. Recipe below.

Recipe:
Dissolve 1 tablespoon salt with a little bit of water in a quart jar. If you don't have a cool place, add a teaspoon more salt, this will slow down the fermentation a little during hot temps.
(Scale up or down, depending what jars you have and how many tomatoes).
Mix the salt in the water until dissolved.
Add cut up green tomatoes.
You can also add spices, garlic, onion, peppers, etc.
Fill jars to leave 2 inch headspace. If you use fermenting weights, make sure you leave enough space so the fermenting weight will be mostly covered in brine.
Top the jars off with water to either cover the tomatoes or the glass weight.
Put on lids and burp those 2 - 3 times per day ones bubbles start.
Put in a cool, dark place. Start tasting your green fermented pickles starting at day 2 - 3.
They are ready whenever you like the taste. Store in refrigerator.

The Best Pickled Green Tomatoes
Hey every one come along with us in the OMG homestead kitchen showing how we can our pickled green tomatoes. I'll also show an easy way to store green tomatoes.

Pickled Green Tomatoes Recipe
5 lb green tomatoes
2 medium onions
1/3 cup pickling salt
3 cups cider vinegar
1 3/4 cups sugar
1 teaspoon ground turmeric
1 teaspoon celery seed
1 tablespoon mustard seed
optional - red bell peppers or hot peppers
Cut ends off of tomatoes and discard. Slice tomatoes into 1/4 inch rounds or bite-size chunks. Peel onions and slice into 1/4 inch pieces. Add tomatoes and onions to a stock pot or bowl and sprinkle with 1/3 cup pickling salt. Gently toss to coat well. Refrigerate overnight or if you’re in a hurry you can cover with ice and let stand for four hours.
In a large pot combine the vinegar, sugar, turmeric, celery seed, and mustard seed. Bring it to a boil and then reduce it to a simmer. Drain the vegetables in a large colander and rinse lightly.
Pack pint size, sterile jars with the vegetables. If desired, add a few thin strips of sweet or hot red pepper. Fill each jar with spice liquid leaving 1/2 inch headspace. Wipe rims and place lids on jars then secure with rings. They should be fingertip tight. Hot water bath for 15 minutes.
