How To make Green On Green Pasta Soup
4 tablespoons vegetable oil
2 leeks (white and green parts)
cleaned and sliced
2 cloves garlic, thinly sliced
1/2 medium cabbage, :
shredded finely
6 cups water or homemade chicken broth
2 zucchini, trimmed, seeded & cut into
1/2" half moons
1/2 pound green beans cut into 1" lengths
1/2 cup orzo or other small shaped pasta
10 ounces frozen "petite" peas, :
thawed
Salt and freshly ground pepper 1 tablespoon each chopped parsley, mint and chives
1 tablespoon chiffonade of basil
Garnish: Freshly grated Parmesan or Romano cheese, Pesto or other herb paste
In a large soup pot, heat the vegetable oil. Add the leeks, cover and cook for a couple of minutes until they begin to soften. Add the garlic and cabbage, 1 cup of the water, cover and cook for 10 minutes or until the cabbage has wilted. Add the remaining water, zucchini and green beans, cover and simmer for 5 minutes or until the vegetables are somewhat tender. Add the pasta, cover and simmer for 10 minutes or until the pasta is tender. (At this point check the level of liquid; if the soup seems somewhat thick, just add more water to bring the level of the liquid back up to where it was at the beginning of cooking time.) Add the peas and simmer for 1 to 2 minutes to heat through. Season carefully with salt and pepper. Remove the soup from the heat and stir in the fresh herbs. Serve with 1 or 2 of the garnishes, according to taste.

1 teaspoon (~2 grams) dried oregano
3 ounces (84 grams) tomato paste
8 ounces (226 grams) canned plum tomatoes hand crushed
8 ounces (226 grams) baby spinach
8 cups (1890 grams) water
16 ounces (454 grams) brown or green lentils see notes below
1 rind Parmigiano Reggiano (optional)

So fam, in this video I use all the amazing tips I received on my previous ebunuebunu video to arrive at this beautiful, vibrant green colored and oh so delicious pot of soup.
Ingredients:
2 large tomatoes
4 scotch bonnet peppers
1 large onion
1 teaspoon garlic paste
1 teaspoon ginger paste
About a handful turkey berries
5 pieces smoked herrings,
1/4 lb smoked guinea fowl,
70g salted mutton
1 lb pig feet
4 pieces (2 whole with head off) baked mackerel
3medium sized snails
2 large blue crabs
2 peices superku salted fish (you may use koobi or kako)
1 lb adwene (smoked fish)
1 bunch cocoyam or taro leaves (substitute with spinach)
salt to taste

This easy vegetable soup is packed with flavor and uses simple, everyday vegetables to their full potential. But there's plenty of room for customization — use any fresh or frozen vegetables you have on hand. It's the perfect blank canvas to work with for soup season!
A simple vegetable soup like this is my absolute favorite. It's nourishing, comforting, fresh, and light, yet filling enough to be a full vegetarian meal. But truth be told, I was never a fan of vegetable soup until I started making it myself at home, with this recipe. Because other versions I had tried were always been a bit bland and boring.
So what makes my version unique (and better)? The vegetables are sautéed with Italian seasoning and loads of garlic, then simmered in a savory broth with fresh lemon juice and parsley. And that punch of fresh lemon really brightens and enhances the flavor!
