1 1/2 lb Round Red OR White
Potatoes 5 c Water
Purple Onion Rings 1/2 c Coarsely Chopped Cucumber
5 Cherry Tomatoes, Halved
1 sm Clove Garlic
1/4 c Plain Low Fat Yogurt
2 tb Crumbled Feta Cheese
1/4 ts Dried Oregano,
1/8 ts Dried Rosemary Crushed
1/8 ts Pepper
4 Ripe Olives
1 tb Chopped Fresh Parsley
Combine Potatoes & 5 C. Water in A Large Saucepan; Bring To A Boil. Cover, Reduce Heat & Simmer 15 Min. OR Till Tender. Drain Potatoes & Chill. Cut Potatoes Into 3/4 in. Cubes. Combine Potatoes, Cucumber,& Tomatoes in A Large Bowl. Set Aside.Drop Garlic Through Chute in Processor With Processor Running. Process About 3 Sec. OR Until Garlic Is Finely Chopped. Add Yogurt &Feta Cheese, Oregano & Rosemary. Process Until Smooth. Add Yogurt Mixture To Reserved Potato Mixture; Toss Gently To Coat. Garnish With Parsley, Olives & Onion Rings If Desired. Cover & Chill Thoroughly. (Fat 1.3. Chol. 5.)

⭐️ Ingredients
2 pounds (1 kg) potatoes boiled, peeled, and cut into bite-size chunks
2 ribs celery thinly sliced
1 cup (120 grams) radishes thinly sliced
1 red onion chopped
½ cup (60 grams) pickles
DRESSING
3 tablespoons fresh dill finely chopped
½ cup (125 grams) vegan mayo or regular mayo
½ cup (125 grams) Greek yogurt or non-dairy yogurt
3 tablespoons (45 grams) apple cider vinegar + 1 tablespoon to sprinkle on potatoes
1 tablespoon (15 grams) mustard
1 teaspoon salt
¼ teaspoon black pepper
½ teaspoon smoked paprika optional, for garnish

Greek Potato Salad PLUS Tzatziki Sauce Recipe
Greek Potato Salad is a little different than traditional potato salad.
I have made a lot of potato salad over the years, but this is, by far my favorite.
Ingredients for Tzatziki Sauce
I Cup Plain Strained Greek Yogurt
1 Cup Grated Cucumber, Drained and Pressed Dry (English Cucumber if Possible)
1 Teaspoon Minced Garlic
2 Tablespoons Lemon Juice, Lime Juice or White Wine Vinegar
6 to 10 Drops Extra Virgin Olive Oil
1/8 Teaspoon Salt as Needed
Salad Ingredients
2 1/2 Pounds Red Potatoes
1/2 Large Purple Onion
4 Green Onion
1 Large Carrot
1 Stalk Celery
1/2 Teaspoon Oregano
1 Teaspoon Salt
Black Pepper as Desired

Ingredients:
1/4 cup Red Wine Vinegar
1 cup Mayonnaise
1 tsp Dried Oregano
1 Tbsp Fresh Parsley
2 1/2 lb Russet Potatoes (approx 6 medium potatoes)
1-2 Tbsp Green Onions
Salt & Pepper to tast
Directions:
Peel & cube your potatoes, about 1 in size.
Place potates in large pot and cover with cold water until water rises about 1 above the potatoes.
Once potatoes reach a rapid boil, continue to boil for about 10 minutes, or until lightly fork tender.
Combine the mayonnaise and red wine vinegar with a whisk until smooth.
Add dried oregano, fresh chopped parsley, salt and pepper to the mayo mixture. Mix well.
Once potatoes are done cooking, drain and allow to cool for about 10 minutes.
Stir potatoes into mayo mixture.
Add green onions and lightly toss with potatoes.
Cover and chill for at least 2 hours before serving.
