1/4 c Grape Nuts cereal 1/4 c Skim milk Fresh fruit (opt) Honey (opt) Place cereal in microwaveable bowl; add skim milk. Microwave on high to taste; 30 seconds for a BIG crunch, 60 seconds for a little crunch. Add fresh fruit or honey, if desired.

Finally the great…I wanna say…taste(?)of Grape-Nuts in a sandwich. Yeah, I was highly skeptical about the Grapenut (sic) Sandwich from 1931’s The Household Searchlight Recipe Book. After all, Grape-Nuts are really more about texture than flavor. Still, it was an interesting journey with a surprising finish. Go figure.

I’ve always liked Grape-Nuts cereal. I’ve never understood what it has to do with grapes or with nuts, but it’s crunchy and kind of adorably tiny and it’s got a nice mellow flavor. I’ve been eating it since I was a kid but I’ve never thought to use it in a recipe, and until I happened upon this recipe card in a vintage recipe tin, I’d certainly never heard of Grape-Nuts Custard. It turns out to be a soft, sweet and slightly nutty custard that’s simple but comforting.

Grape Nut Applesauce Muffins
These delicious muffins were the end result of an uneaten box of cereal that I did not want to go to waste. They are not only EASY to make but are also a budget-friendly, HEALTHY snack! A great low-fat breakfast option too!
RECIPE
1 1/4 cups Flour 1 tablespoon Baking powder 1 teaspoon ground cinnamon 1/4 teaspoon salt 1 cup Grape Nuts Cereal 1 cup milk 1 egg slightly beaten 1/2 cup chunky applesauce (I used regular) 1/2 cup Brown sugar firmly packed 2 tablespoons Margarine melted 1/2 cup dried cranberries or raisins I omitted these)
Heat oven to 400(F). Mix flour, baking powder, cinnamon and salt in a large bowl. Mix cereal and milk in another bowl; let stand 3 minutes. Stir in egg, applesauce, sugar and margarine. Add to flour mixture; stir just until moistened (batter will be lumpy). Stir in cranberries. Spoon batter into muffin pan sprayed with nonstick cooking spray, filling each cup 2/3 full.
Bake 20 minutes or until golden brown. Serve warm. Freeze any leftovers.
