The last batch of Enchiladas sauce I made was way too spicy for my taste, so I made a milder batch today that I liked much more. I also went for a walk through the garden and planned this next week's harvests. I hope you enjoy coming along with me.

How to Beef Enchilada Casserole

I was surprised Mr R really liked these and they were good.. First time I made this recipe... I usually use chili powder from NM ... So come along ...
Ingredients

8 flour torillas for burritos your choice
1 pound hamburg
1 can 10 oz enchilada sauce your choice
1 jar of black bean-corn salsa
2 cups of 4 Mexican cheese

Heat oven to 350
spray a 13x9 baking dish
fold the the four torillas one side to other
Cook beef
once cooked
put in large bowl
beef
add 1/4 cup enchilada sauce
1 jar of black bean/corn salsa
1 cup of cheese

Then fill the middle of torillas
then top the rest of enchilada sauce
and the 1 cup of cheese on top...

Bake at 350 for 40 -45 minutes until bubbly
