How To make Golden Fudge I
2 1/2 c Firmly packed brown sugar
1 c Sugar
1/2 c Butter or margarine
1 c Non-dairy liquid coffee
Cream 2 1/4 c Butterscotch wafers or
Chopped butterscotch blocks 4 1/2 c Marshmallow creme
1 c Chopped pecans or other nut
1/2 c Raisins
1/2 t Vanilla
1 t Butter-rum flavoring
Combine sugar, butter, and coffee cream in a heavy 2 1/2-quart saucepan. Place on medium heat and stir until butter is melted. Cook without stirring to 238 degrees F., about 15 minutes. Remove from heat; add butterscotch and marshmallow. Stir until thoroughly blended. Add nuts, raisins, and flavorings. Pour into 2 greased 8-inch square pans. Let set several hours until firm. Cut into squares. Keep in closed container. Makes about 98 pieces. *NOTE: Invert sugar is Cane sugar in liquid form. Improves the quality and keeping properties in candy. If it crystallizes, place over hot water until it liquifies.

Beef Tallow Fudge
Ingredients:
- 400g (14 oz) sugar
- 150ml (5 fl oz) milk
- 25g (0.88 oz) cocoa powder
- 25g (0.88 oz) golden syrup
- 1/2 tsp salt, plus extra for garnish
- 60g (2.1 oz) beef tallow
Method:
1. In a pot, combine the sugar, milk, cocoa powder, golden syrup, and 1/2 tsp of salt. Cook this mixture over medium heat until it reaches 115°C (239°F). Once it reaches this temperature, remove the pot from the heat.
2. Add the beef tallow and let the mixture sit undisturbed for 10 minutes.
3. After 10 minutes, beat the mixture well until it's smooth and thickened. Then, pour it into a tray lined with parchment paper and press to the desired thickness. Sprinkle a little bit of salt over the top for garnish.
4. Allow the fudge to cool in the fridge until it sets.
5. Once set, cut the fudge into pieces and it's ready to enjoy.

Old fashioned fudge recipe without sweetened condensed milk or marshmallows. With basic ingredients and technique you can make fudge the way your grandma's grandma made it! Recipes for vanilla and chocolate fudge

INGREDIENTS
2 cups sugar
1 cup whole milk
½ cup evaporated milk
½ teaspoon salt
3 tablespoons unsalted butter
2 teaspoons vanilla
INSTRUCTIONS
Line a baking sheet with parchment paper and set aside. In a medium saucepan combine sugar, whole milk, evaporated milk and salt. Heat over medium and stir constantly until sugar dissolves and mixture comes to a boil.
Reduce heat to medium low and cook until mixture reaches 240F/116C on a candy thermometer. Stir frequently to prevent burning. If you do not have a candy thermometer, drop some of the mixture into cold water. If a soft ball forms, it is ready. If you would like a firmer fudge, cook a few minutes longer. In total it should take about 30 minutes. Remove from heat.
Add butter but do not stir. Allow the mixture to cool in the pot until the butter is melted and the bottom of the pot feels very warm to touch but not hot.
Add vanilla and beat vigorously with a spoon until the fudge begins to thicken and lose its gloss. Quickly spread onto the parchment lined baking sheet to form a slab of your desired thickness. Cool for 2-3 hours before cutting into squares. Fudge tastes best a day or two later.
