Vegan Gingerbread Recipe » Let's get baking!
Merry Christmas everyone! Just fitting in some last minute baking and thought I'd take you along with me as I bake some delicious and cute little gingerbread cookies! These are perfectly crispy on the outside but still soft and chewy on the inside and make a great addition to your Christmas menu! ????
GINGERBREAD RECIPE (Plant-based)
Ingredients for Gingerbread:
2 + 3/4 cups of plain flour
2 Tablespoons Applesauce
1/2 cup Brown Sugar
1/2 cup softened vegan butter/spread (I used Nuttelex)- softened at room temperature
1/2 cup unsulphured molasses
2 teaspoons ground ginger
1 teaspoon mixed spice
1/2 teaspoon baking soda
Ingredients for Icing:
1/2 cup icing sugar
1 teaspoon lemon juice
1 teaspoon glucose syrup
3/4 teaspoon water
METHOD:
Gingerbread:
1. Add brown sugar, apple sauce, butter and molasses into a bowl and mix it up until it is well combined (you can use an electric mixer or the back of a spoon/fork to press out any lumps and mix it all together)
2. Add in plain flour, baking soda, ground ginger and mixed spice and using your hands, mix that up until it is a well combined dough.
3. Depending on the climate/temperature in your area- the dough may feel sticky but that is ok (try not to add more flour). Divide mixture into 2 seperate halves, wrap it up with some cling wrap and place in fridge for 60 minutes to allow the dough to set (this makes it a lot easier to roll out your dough)
4. Place the dough in between 2 sheets of baking paper and roll out to approximately 1/2 cm thickness. Use your cookie cutters to cut out your gingerbread and then peel away any excess dough.
5. Place your cut gingerbread cookies onto a baking tray and bake in the over at 180ºC for 7-10 minutes until the tops are just set (but they are still soft when you press on them)
6. Allow to cool for 5 mins in baking tray before transferring onto wire rack to cool down completely before icing
Icing:
1. Sift icing sugar into a bowl
2. Add in the lemon juice, glucose syrup, water and mix until well combined
3. Place into your piping bag (if you don’t have one then spoon into a zip lock back and cut a small hole in the corner)
4. Decorate your gingerbread and allow 2 hours for the icing to set completely!

I loved making my classic gingerbread house with Avalon last year but this year I wanted to try some more advanced techniques like making a curved gingerbread house roof, curved front porch and baking gingerbread in silicone molds.

Ginger & Dried Fruit Gingerbread House Recipe
500g strong white bread flour, plus extra for dusting
30g caster sugar
1 tsp salt
7g (1 teaspoon or 1 packet) fast-action dried yeast
300ml whole milk
75g unsalted butter, plus extra for greasing
the zest of 1 clementine
2 tsp mixed spice
1 large free-range egg
100g mixed dried fruit and peel
4 or 5 pieces of @opiesfoods stem ginger
A little syrup from the stem ginger jar.
Place the flour, caster sugar, salt and yeast into a large bowl and set aside. Put the milk, butter, clementine zest and mixed spice into a small saucepan and cook over a low-medium heat until all the butter has melted. Set aside until just lukewarm.
Make a well in the middle of the flour mixture, then pour in the milk mixture and add the egg. Mix with your hands to form a rough, soft dough. Tip out onto a lightly floured work surface and knead for about 10-15 minutes until smooth and elastic. (I did this in my stand mixer, using the dough hook on low speed for 10 minutes.) then put the dough in a lightly greased bowl and cover with cling film. Leave it to rise for about 1-1½ hours or until it has doubled in size.
Once it’s risen, knock it back with your fist and tip in the dried fruit and stem ginger and pour in a little of the syrup from the jar. Knead the fruit into the dough.
Prepare you Bundt tin by brushing it with some liquid release. Place the dough into the mould and cover with a tea towel and set aside for 30 mins.
Preheat the oven to 200c / 392f
Bake in the oven for 45 mins. Once baked, remove from over and carefully invert on a wire rack. Once cool, dust liberally with icing sugar.

What You'll Need:
- A 1 qt. (32 oz.) jar:
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp. salt
- 1 cup packed brown sugar
- 1 1/2 cup flour (this is not a typo!)
- 2 tsp ground ginger
- 1 tsp ground allspice
- 1 tsp cinnamon
- 1 tsp ground clove
What You'll Do:
1. whisk together the flour, baking soda, baking powder, and salt; pour into the bottom of your jar, and press down into a level layer
2. on top of the flour, add the brown sugar, and press down into an even layer
3. whisk together the flour, ginger, allspice, cinnamon, and clove; pour into the bottom of your jar, and press down or shake into a level layer
4. place the lid on the jar; add a name tag; add a bow; tape on the ingredients and instructions for your gift recipient, and deliver with love
FOR YOUR GIFT RECIPIENT (Print and attach these to each jar)
What They'll Need:
- 1/2 cup butter, melted
- 1 large egg
- 3/4 cup molasses
What They'll Do:
In a large mixing bowl, mix melted butter and egg. Add molasses and the entire jar of cookie mix. Stir until well combined. The dough will be thick so you may want to use your hands. Wrap dough in plastic wrap and refrigerate for one hour.
Preheat oven to 350°F. On a well-floured surface, roll out the dough to 1/4 of an inch thick. Use cookie cutter to create gingerbread men and transfer them to a parchment-lined baking sheet. Bake for 12-14 minutes. Enjoy!
