Apple Spice Buttermilk Waffles: Recipe & Demo

Buttermilk Waffles with Apples & Spice
1 c. All Purpose Flour
2 t. Baking Powder
1 t. Baking Soda
1/4 c. Cornstarch
1/2 t. Salt
2 T. Sugar
2 t. Cinnamon
1/2 t. Ground Ginger
1/2. c. Vegetable Oil ~or~ Melted Butter
1 c. Buttermilk
1 Egg
1 Apple, peeled and grated (any variety). Optional fruits: sliced bananas, grated pear, also: shredded coconut, chopped/toasted walnuts or pecans.
Preheat waffle maker on medium. Preheat oven to 200-225F. In a medium mixing bowl whisk all of the dry ingredients together including the spices. Make a well in the center and add the egg, oil, and buttermilk. Whisk just until combined. DO NOT OVERMIX. Add grated apple and fold into batter. Lightly oil waffle grids, if necessary for your model. Add batter to waffle iron grids being careful not to overfill. Close and bake until golden and crisp. Transfer finished waffles to warmed oven by placing them directly onto oven rack. DO NOT USE BAKING PAN OR PLATE AS THIS WILL MAKE THE WAFFLES SOGGY. Serve plain or with powdered sugar &/or maple syrup. ENJOY!

Spice Waffles
Ingredients:
1 cup wholewheat flour
1/2 cup All Purpose flour
Or 1 1/2 cups All Purpose flour
3 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp cinnamon powder
1 tsp nutmeg
1 tsp ground ginger powder
1 tsp pumpkin spice
Pinch of salt
2 eggs
1/4 cup brown sugar
1 1/2 cups milk
4 tbsp butter (melted)
1 can purée pumpkin or 1 1/2 cups fresh pumpkin
Method:
In a medium mixing bowl add flour, baking powder, baking soda, cinnamon powder, nutmeg, pumpkin spice powder, ground ginger powder, pinch of salt, mix together. Add sugar, 1/2 milk, butter, eggs. Fold in pumpkin and the rest of the milk.

Vanilla extract 1/2tsp
Molasses sugar 2tsp
Espresso 2 shot
Milk 200ml

Doug Cooking - Gingerbread Waffles
Recipe recap:
1 1/2 cup All-Purpose Flour
1/2 cup Corn Starch
1 tablespoon Baking Powder
1 teaspoon Ground Ginger
1 teaspoon Ground Cinnamon
1/4 teaspoon Kosher Salt
1/3 cup Molasses
6 tablespoons Butter, melted plus more for the griddle
2 Eggs, beaten
1 1/2 cup Milk, whole or part skim
Glaze
1/2 cup Powdered Sugar
1 small Citrus fruit, such as a Mandarin or Lemon, both zest and juice
Preheat waffle iron.
In a large bowl, combine dry ingredients. In a measuring pitcher, add the melted, cooled butter to molasses. Crack and whisk eggs separate bowl, then add to molasses mixture.
Whisk in both the molasses mixture and milk to the dry ingredients.
Butter the waffle iron and add an appropriate portion of the batter. Cook for approximately 5 minutes.
For the citrus glaze, add a 1/2 teaspoon of zest to 1/2 cup of powdered sugar, then add a few drops of the citrus juice. Stir until desired ribbon-like consistency is achieved.
Finish cooking remaining waffles. Serve immediately or place finished waffles on a baking rack and into a 200F oven until serving.
Top with powdered sugar, maple syrup, or mandarin sugar glaze. Enjoy!
