How To make Giffilte Fish
5 lb Fish; equal amounts
-pike, carp, etc 3 Onions; sliced
Celery stalk; sliced 3 Large carrots; sliced
1 -Water; to cover
1 -Salt; to taste
1 White pepper; to taste
4 Eggs
2 tb Matzo meal
1 Salt to taste
1 White pepper to taste
1/4 c Water
Carrots; sliced for pan Onions; sliced for pan 1 bn Beets; sliced (optional)
Have fish man grind: 5 lbs.fish filets-equal amounts; white fish and pike;and a small amount of carp or buffle carp; In a large kettle: heads,bones,and trimmings of fish; 3 onions,sliced; 1 celery stalk,sliced; 2 large carrots,sliced; water to cover; salt to taste; white pepper to
taste; Bring to boil. While this is simmering prepare the fish. Combine in Food Processor: 1 onion; 4 eggs; add mixture to: ground fish; 2 tbs.matzo meal ; salt to taste; white pepper to taste; 1/4 cup water;
Shape fish mixture into balls. I used to do this by hand; chopping in a large wooden bowl with a hack messer. Be CARFUL, you don't want mush but distinct tiny peices. Take another pan; and layer the beets on the bottom; some sliced carrots, onions, fish; repeat with everything but the beets. end eith some carrots. Pour the broth from the OTHER kettle over the fish. Simmer,covered for 2 hours. When cool,remove fish balls to platter and garnish with sliced cooked carrots. Strain broth and chill. Serve with jellied fish broth and fresh ground horseradish. NOTE: The beets are unusal but my Mom and Bubbe ALWAYS used them. They do two things; keep the fish from 'catching' on the bottom and give the broth a ruby red color; but not the fish; they remain white. This recipe was passed down the generation to me through my grandmother (z''l) who was a wedding cook in her schtetl.
Gefilte Fish (yiddish גיפילטע פיש from German gefüllter Fisch) means STUFFED fish! So how can one call those fish balls gefilte fish?
Gefilte Fish is like the Yiddish language. You only open your mouth to find out that you're speaking the wrong way! :) Like Yiddish has different dialects, Gefilte Fish recipes differ from place to place. Everyone considers ther recipe to be the only correct one of course :) Well, mine comes from Eastern Ukrain from a schtetl called Bobrinetz (today in Kirovogradskaya Oblast').
Bekitzer, this is the best Gefilte Fish recipe on Youtube and probably on the net.
P.S. I used Matzo Meal because it's for Pesach, but usually I use two slices of bread, soaked in water.
This recipe is kasher le-pesach, kosher for Passover.

Gefilte Fish Recipe

Ingredients for 12 gefilte fish
800 grams or 1.7 pounds of whitefish
two slices of carp 1 or 2.5 cm thick
carp head
8 cups or 1.8 liters of water
1 cup or 250 mils matzah meal
3 eggs
2 onions with the peel
6 carrots
3 parsnip
2 celery stalk and celery leaves
1 sweet potato
a bouquet of parsley
1 sheet of kombu seaweed
3 tablespoons of sugar
2 tablespoons vegetable oil
salt and pepper
Instructions
1. set a side one carrot, one parsnip and one small onion
2. place the rest of the vegetables in the boiling water
3. add the crap pieces and cook until all the veggies and fish are tender (about 30 minutes)
4. once the carrots are tender, remove 4 of them from the pot and set aside
5. add 2 tablespoons of sugar to the broth, 1 teaspoon of salt, 1/4 teaspoon of black pepper (you can adjust to your liking)
6. grate the carrot, parsnip and small onion that were set aside
7. in a food processor, blitz the whitefish until pasty
8. add the grated veggies, the matzah meal, the eggs, teaspoon salt, 1/4 teaspoon salt, 1 tablespoon sugar, 2 tablespoons of vegetable oil and blitz until well blended
9. place the mixture into a bowl and into the refrigerator for 30 minutes
10. pour the broth through a mesh strainer lined with cheesecloth
11. pour back into a shallow pan and bring to a very low simmer
12. divide the gefilte mixture into 12 equal parts
13. make 12 even, oval balls and cook in the hot broth for 1 and 1/2 hours
14. after the gefilte fish is cooked, pour the broth through the mesh strainer lined with cheesecloth, in order to keep the broth clear
serve at room temperature or cold and add horseradish on the side
enjoy!

Stuffed Fish (Gefilte Fish)
Ingredients:
2 KG. OF GUTTED CARP
800 G. OF PIKEPERCH FILLET
800 G. OF SEARED TO LIGHTLY BROWNED ONIONS
300 G. SALTED CRACKERS
3 MEDIUM EGGS
200 ML. CREAM (18%)
GROUND BLACK PEPPER TO TASTE
SALT TO TASTE
Preparation:
STEP ONE: RINSE CARP UNDER COLD WATER, DRY WITH PAPER TOWEL.
GENTLY REMOVE THE BOTTOM FINS.
MAKE A SMALL INCISION ALONG THE FISH BELLY.
SEPARATE THE SKIN FROM THE FILLETS WITH SPOON
SNIP THE BACKBONE NEAR THE TAIL.
STEP TWO:
MAKE AN INCISION INSIDE OF FILLET, THEN SEPARATE IT OF THE FIN.
REPEAT THE PROCESS ON THE OTHER SIDE OF THE FIN BONES.
SET ASIDE FISH CARCASS WITH SKIN.
SKINLESS FISH PUT ON CUTTING BOARD AND SEPARATE FROM BONES
CUT CARP FILET IN MEDIUM PIECES, IN FOOD PROCESSOR BOWL
COMBINE
PIKEPERCH FILLET
ONION
CRACKERS
LET CRACKERS SOAK IN CREAM
SEASON TO TASTE
STEP THREE: SEPARATE YOLKS FROM WHITES.
ADD YOLKS TO THE STUFFING,
ADD WHITES, BEATED TO STIFF PEAKS
GENTLY MIX STUFFING FOR AIRNESS
SPREAD FOIL ON THE TABLE, THEN SPRINKLE WITH OLIVE OIL
FILL FISH WITH STUFFING AND ROLL IN FOIL
COOK IN PREHEAT TO 160°C OVEN ABOUT 1,5 HOUR
SERVE COLD WITH HORSERADISH OR MUSTARD
