8 oz CREAM CHEESE
3 tb BUTTER
1 c OIL
2 c FLOUR
1 ts BAKING SODA
1 c NUTS, CHOPPED
1 ts VANILLA
1 1/2 c POWDERED SUGAR
BEAT EGGS AND OIL IN A MIXER UNTIL FOAMY. ADD AND MIX BY HAND, THE SUGAR, FLOUR, APPLES, CINNAMON, BAKING SODA AND NUTS. POUR INTO A 9X13 INCH PAN AND BAKE AT 350 FOR 45-60 MINUTES. FOR ICING: WITH A MIXER COMBINE AND BEAT WELL THE CREAM CHEESE, BANILLA, BUTTER AND POWDERED SUGAR. SPREAD OVER COOLED CAKE.

60 ml Pflanzenöl

35-40 Minuten bei 180 °C im Ofen backen

Super delicious traditional German Apfelkuchen (applecake)
Tradiitonal German Apfelkuchen, easy to make, also for beginner:
For the sponge:
2 apples (peeled and cut into pieces)
125 g (4,5 oz) soft butter
100 g (3,5 oz) sugar
200 g (7 oz) flour
3 eggs
1 Tsp vanilla extract
a few drops lemon extract
2 level tsp baking powder
1 pinch of salt
1 shot of milk (ca. 2 tablespoons)
For the topping:
2-3 apples (peeled and cut into slices)
2-3 tablespoons apricot-or orangejam
Grease a springform mould and preheat oven to about 325°(top/bottom heat)-350°(fan oven) Fahrenheit. I prefer top/bottom heat, otherwise the cake seems to get a little bit too dry in my oven.
Whisk the butter in a mixing bowl and add sugar, vanilla extract, salt and lemon extract little by little until you have a smooth mixture.
Add the eggs, one after each other for 1/2 minute each on the highest setting. Mix flour and baking powder together and add it to the mixture, alternating with the milk.
Now add the 2 apples and fold them into the mixture and transfer the mixture into the springform.
For the topping, arrange the rest of the apples on top of the sponge and bake it for about 45 minutes.
Shortly before the cake the 45 minutes are over heat up the jam so you can spread it all over the top of the cake once you take it out of the oven.
Let it cool a bit and serve it with whipped cream or vanilla ice-cream. Enjoy! :-D

看到市場上栗子、南瓜、蘋果和提子等都當做的時候,雖然中午的天氣有時還是很炎熱,但秋天的確已經來到了。

在首爾,一個像中秋韓國水梨般大的蘋果只是賣HK$5左右,又爽又清甜,好吃得除了普通吃外,不得不令我想做一個蘋果的食譜。
.
如果大家是烘焙新手的話,這個食譜真的很值得推介,沒有什麼特別的技巧,而蘋果的份量佔了蛋糕一半左右,所以吃下去雖然有點甜,但由於有一半也是焗軟的蘋果,所以吃下不會很肥膩。

如果沒有冧酒的話,可以用其他甜酒代替,甚至不加也可以。
.
有些食譜在蛋糕上面會加一層金寶,我想省卻步驟,所以便沒有加了,想表面焗得香脆的話,一定要在蛋糕面上灑上一湯匙砂糖,那蛋糕一定可以做到表面香脆呢。

如果放假有空的話,也可以試做這個簡單的蘋果蛋糕喔。材料(六吋盤)
麵粉60克
牛油60克,另加3克作粘貼底盤紙用
糖70克
泡打粉半茶匙
鹽¼茶匙
蛋(大)一隻
雲呢拿籽半條或雲呢拿精華半茶匙
冧酒1.5湯匙
蘋果一個
杏仁片兩湯匙
蛋糕面材料
白砂糖一湯匙
糖霜一湯匙
做法
1. 將牛油紙剪到焗盤的形狀,用牛油紙粘貼在焗盤內
2. 蘋果削皮後切2cm正方粒
3. 牛油先從雪櫃拿出來在室溫稍為放軟
4. 焗爐預熱至170度
5. 將所有乾材料包括麵粉、泡打粉和鹽,輕輕混合
6. 在一個拌碗內加上牛油,然後加入砂糖,用打蛋器以中速打勻
7. , 加入雞蛋拌勻
8. 加入冧酒及雲呢拿籽(或雲呢拿精華)
9. 分三次將麵粉放入麵糊內,用摺疊(fold) 的形式拌勻
10. 加入蘋果粒拌勻
11. 將麵糊放到焗盤內
12. 加入杏仁片及灑上砂糖一湯匙
13. 放入焗爐以170度焗30-40分鐘
14. 在蛋糕面灑上糖霜,便可享用
German Apple Cake
Ingredients: (6 inch pan)
60g all purpose flour
60g butter, plus 3g for fixing the baking paper
70g sugar
1/2 tsp baking powder
1/4 tsp salt
1 large egg
1/2 Vanilla seed or 1/2 tsp Vanilla extract
1.5 Tbsp dark rum
1.5 Apple, peeled, cored
2 Tbsp Almond flakes
Toppings:
1 Tbsp sugar
1 Tbsp Icing sugar
Directions:
Cut the baking paper as the size of the pan. Use the butter to fix it on the pan.
Take the butter out from the fridge in advance so that it becomes softer.
Peel and cut the apple into cube size (2cm)
Pre-heat the oven to 170 degree Celsius.
Mix flour, baking powder and salt.
In another mixing bowl, put butter sugar in and mix it with electric egg beater until it becomes fluffy.
Add egg.
Add dark rum and vanilla seed (or vanilla extract).
Add the flour in 3 batches and fold it to the batter.
Add apple cubes in 2cm cube size.
Transfer the batter to the baking pan.
Add almond flakes and 1 Tbsp of sugar.
Bake for 30-40 minutes at 170 degree celsius.

Ingredients (Streusel):
1/2 Cup sugar
3/4 tbsp vanilla sugar
1/2 cup butter
4 Tbspn flour (approx. depending on desired consistency)
Optional:
Unflavored Breadcrumbs
Cinnamon
Steps:
1. Mix flour, sugar, eggs, baking powder, vanilla sugar, and butter into a dough
2. Spread the dough out on a 30 x 43cm (12 x 17inches) baking sheet so it is at least a 1/4 inch thick, then poke holes with a fork. Sprinkle breadcrumbs across the top in a thin layer.
3. Arrange the apples on the sheet of dough. On top of the apples spread a pinch of sugar and cinnamon.
4. Set aside the sheet cake. Mix the streusel butter, sugar, and vanilla sugar. Slowly add flour until the mixture is crumbly
5. Add the streusel over the apples on the sheet cake.
6. Bake in the oven 350F for 45 minutes
