Zesty Roasted Cauliflower Pasta With Seasoned Breadcrumbs | Vegan Pasta Recipe
Zesty roasted cauliflower pasta has been my go to comfort pasta lately. Love the crispy texture of the breadcrumbs with chewy, zesty pasta. It's something you just have to experience yourself ! I've been sprinkling all of my pastas and salad with this easy delicious breadcrumbs. Its just so addictive! So I hope you enjoy these recipes!
Breadcrumbs Ingredients
1 cup panko breadcrumbs
1/4 tsp dried oregano
1/4 tsp dried thyme
1 tsp nutritional yeast
1/2 tsp chili flakes
1/4 tsp salt
2 tbsp olive oil
Instructions
Place all the ingredients into a pan, mix with a spatula to incorporate all the seasonings and oil evenly.
Toast on the stove on low heat, stirring constantly to toast the breadcrumbs evenly. Toast for 5-8 minutes until its golden brown.
This recipe makes 2 servings.
Roasted cauliflower
1 medium sized cauliflower
1/2 tsp black pepper
1/2 tsp salt
2 tbsp olive oil
1. Preheat oven to 200 degrees celcius.
2. Cut cauliflower florets into 1 to 1 and 1/2 inch bite size pieces.
3. Place cauliflower onto a lined baking tray. Add black pepper, salt and olive oil over the cauliflower and toss until combined well.
4. Bake in the preheated oven for 25 mins until you have golden brown edges on the cauliflower.
Lemon Pasta
2 cloves of garlic, minced
2 tbsp olive oil
2 servings of spaghetti pasta
1/2 tsp lemon zest
1 1/2 tsp lemon juice
1/4 cup of pasta water
1/2 salt
1. Heat olive oil on a pan on medium low heat. Saute minced garlic until it starts to brown then remove from the heat.
2. Cook pasta in salted water until one minute before its al dente.
3. Place pan of sauteed garlic back on the stove on medium low heat. Transfer cooked pasta into the pan together with the pasta water. lemon juice, lemon zest. Let it simmer for 1-2 minutes until the pasta is al dente.
4. Serve pasta with roasted cauliflower, seasoned breadcrumbs and a bit more lemon zest on top.

If you have been with me for any length of time, you know that I love one-pot pasta dishes. I have several videos and many one-pot recipes on my website. I love these one-pot pasta recipes for three reasons, they are quick and easy to make, there is only one pot to wash, and the flavors blend and development as all the ingredients cook together. Today's One-Pot Linguine with Cauliflower, Lemon, and Olives is no exception. It is a fantastic recipe. But be sure to check out my other One-Pot recipes as well.
Who would ever have thought that pasta and cauliflower would work so well together? They provide a texture difference that I really like. Since both the pasta and cauliflower are bland in flavor, we added capers, olives, lemon, and garlic to really spruce up the flavors. Finish it up with a little fresh parsley, and you have a fantastic dish to put on the table in practically no time.
