How To make Funnel Cake Mix Recipe:
1 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
Combine all ingredients, stirring well. Store in airtight container. To make Funnel Cakes: Pour vegetable oil into a round heavy pot to a depth of one inch. Heat oil to 360 degrees over medium-high heat (may need to be higher). In a small bowl, combine 1 egg with 3/4 cup milk. Add 1 cup Funnel Cake mix and beat with fork until smooth. Holding = finger under funnel opening, pour about 1/4 cup of batter into funnel. Allow batter to pour from funnel into hot oil, moving funnel in a circle to form a spiral shape. Fry 1 minute, turn cake, and continue frying until golden brown. Remove to paper towels to drain. Sprinkle with confectioners sugar or a mixture of cinnamon and sugar. Makes 6 Funnel Cakes. (Great gift idea! Give decorative bag of mix with a copy of the recipe.)

These hot fluffy golden brown funnel cakes, topped with a simple sprinkling of powdered sugar are so much easier to make than you can imagine. My secret ingredient for these is using pancake mix, so this batter comes together with just a few ingredients and you can fry it up right on the stovetop.

Easy Pancake Mix Funnel Cakes
Yield: 4 (5-inch) funnel cakes (recipe easily doubles)
Ingredients
vegetable oil for frying
1 cup just add water Buttermilk Pancake Mix
1/4-1/3 cup water
1 large egg
1 teaspoon vanilla extract
powdered sugar for topping
Directions
Add enough oil to a skillet so it comes about halfway up the side of an 8-inch pan, and heat it on medium heat until it reaches about 360°F.
Add pancake mix to a bowl and whisk in the water, egg and vanilla. Pour batter into an empty and clean ketchup bottle, or plastic sandwich baggie with the corner snipped off.
Test oil to make sure it is hot enough by dropping a small dot of batter in the pan. It should quickly float and sizzle with little bubbles forming all around the batter, without it burning.
When oil is ready, quickly squeeze the batter in a circular motion into the frying pan. Cook about 30 seconds to 1 minute until golden brown on the bottom. Flip funnel cake and cook the other side, about 30 seconds or until golden brown. Remove from the oil and transfer to a paper towel lined plate. Sprinkle with powdered sugar and serve warm.

You go to the fair and there's that sweet sweet smell floating through the air..oh yes, funnel cakes. Loads of people think it can't get it any better, wrong.
