This Terrina is a perfect dish to prepare in autumn when you can find fresh mushroom from your woodland healthy walk. The fruiting bodies of many mushroom species flourish in autumn with the return of the cooler, wetter weather.

Vegan Oyster Mushroom No Chicken Sandwich Oil free Wheat free
Maitake or oyster mushrooms
Almond Bread Crumbs
1 cup Aquafaba OR Plant milk + 1 tbls ground flax
¼ cup Arrowroot starch
¼ cup Oat flour (I purchase Certified organic, third party certified glyphosate free oats)
Combine arrowroot and oat flour in a bowl.
One at a time, dip mushroom pieces into liquid mixture, then flour mixture, back in the liquid then bread crumbs. Continue until all pieces are nicely coated.
Add breaded mushrooms to the airfryer basket and air fry at 350F for 10-13 minutes or until golden brown. Alternatively bake at 375F for 20 minutes, flipping halfway.
Add breaded mushrooms to a sprouted grain bun. Add desired toppings. Pour generous amount of jalapeño cheese sauce.
Making wild rice mushroom soup with homegrown oyster mushrooms | Harvest and Cook
Usually in this series I'm talking about vegetables, but today I have mushrooms growing in my garden! Learn how to make my grandpa's Wild Rice Mushroom soup recipe.
3 cups cooked wild rice (or half black rice)
8 oz fresh mushrooms, sliced
1 large onion, chopped
2 quarts chicken stock (or veggie stock)
¼ cup flour
1 pint ½ & ½ (or cashew milk, almond milk, etc)
4 oz butter (or olive oil for sautéing and vegetable shortening for the roux)
2 oz cognac or brandy (or whiskey)
Chop mushrooms and onions
Start rice boiling in the chicken stock
Sauté mushrooms and onions in butter or olive oil until crispy
Add mushrooms and onions to the simmering rice
When rice has 15 more mins to cook, add half and half and alcohol.
Then begin making a roux with butter (or veg shortening) and flour. Melt the fat, and slowly add flour, mixing until combined, until a thick creamy texture is achieved. Add the roux to the soup.
Cook until rice is finished! Add salt to taste.

Ingredients
Ghee – 2 tbl spoon
Cashews – Approx. 50 grams
Chopped garlic – 1 teaspoon

HOISIN SAUCE:
10 T Brown Sugar
3 T Soy sauce
2 T Dark Soy
3 T Rice vin
3 T Sesame Paste/Tahini
4 T Vinegar, Rice
2 tsp Sesame oil
2 tsp Fermented soy bean paste
1 tsp 5 spice
1 tsp chili flakes
4 Garlic, cloves grated
1 T Corn Starch/Flour
1 Cup/230ml Water
WASABI MAYO:
1 Cup Vegan mayo
2 T water
1 T Wasabi Powder
MUSHROOMS:
1 Lbs or 2 kg Variety of mushrooms
6 in/15 cm soft tortillas
1 TBS of Chinese 5 Spice
1 tsp Garlic Granulated
1 tsp Onion Granulated
5 TBS Neutral flavored oil
2 TBS Sesame oil
STEP BY STEP:
Sort and clean any soiled mushrooms, add to large bowl and toss with oil and seasoning.
Spread out evenly onto baking sheet(s) and roast at 200c/400f fan for 30 minutes or until
crispy. They will shrink down a lot. Once cooked add to bowl, toss with enough Hoisin to
coat all the mushrooms.
Add roughly 3 TBS of mushroom mix to each torilla, wrap and fold then add to casseraole
pan side by each until full. Brush with sesame oil and back for 15 mins at same oven temp
as above.
Serve with wasabi mayo, extra hoisin, chopped cucumber and green onion.
