Pineapple and Cucumber Salad Recipe!

The flesh and juice of pineapples are used in cuisines around the world. In many tropical countries, pineapple is prepared, and sold on roadsides as a snack. They are sold whole, or in halves with a stick inserted. Whole, cored slices with a cherry in the middle are a common garnish on hams in the West. Chunks of pineapple are not only used in desserts such as fruit salad, but also as a main ingredient in savory dishes, such in hamburgers, and as a pizza topping. Crushed pineapple is used in yogurt, jam, sweets, and ice cream. The juice of the pineapple is served as a beverage, and is also as a main ingredient in such cocktails as the Piña colada. - Excerpt from Wikipedia

Pineapple and Cucumber Salad

Serves 2
Cook Time: 20 minutes

For Vinaigrette
• 1 pint of raspberries
• 5 mint leaves
• ½ cup of neutral oil
• 1 tbsp of hot sauce, your choice
• 2 tbsp of honey or agave sweetener
• 2 rehydrated guajillo chiles, stemmed
• salt and pepper to taste

For Fruit Salad
• 1/8 to ¼ of a ripe pineapple, peeled and quartered into bite-size pieces
• ¼ english cucumber, sliced on the bias
• 2 green onions, sliced
• 2 tbsp cilantro, chopped
• 6 mint leaves sliced thin
• 2 large strawberries, quartered
• 1 orange, peeled and sliced
• 1 tsp of sambal chili sauce
• 1 tsp of fish sauce
• 1 tbsp of honey or agave sweetener
• salt to taste

Puree all vinaigrette ingredients and set aside in refrigerator. Assemble fruit salad by mixing all ingredients together. Add on vinaigrette last.
