Hi, it’s Kristy in the Rada Kitchen, and today I’m making easy easy easy caramel pecan rolls. They’re so easy but everyone will think you spent hours making them. My mom has been making them for years and I got the recipe from her so I want to share them with you!
What you need, depending on the size of the pan, are these frozen dinner rolls. You can use a bun pan, you can use a rectangular baker, if it’s a smaller pan you don’t use as many rolls. I’m using this Rada Stoneware 9” x 13” pan. This doesn’t need seasoning. I’ve used it quite a bit, so it’s ready to go. If you use any other pan you’ll want to spray it well with butter spray.
So what you do is you take these frozen rolls and do this the night before. They’re going to make you look like a great chef when you don’t even have to do anything. We’re just going to line these up in that baking pan. Once you have those, if you want a finger size in-between them because they’re going to rise in the oven overnight. I’m going to take this 3.5 ounce box of dry butterscotch pudding. We’re just going to sprinkle that over. Then I have a half cup of pecans. Now, you can leave them whole, but I’m just going to chop them up with this Rada French Chef Knife. You might want to use more than half a cup. Now what you’re going to do is just sprinkle nuts.
Here we have 1 stick of butter or margarine. We’re going to melt this in the microwave. The trick is not to get it too hot, because we’re going to add brown sugar to it, and if it gets too hot it will curdle and won’t work as well. I’m going to put it in for 20 seconds. After 20 seconds in my microwave, that’s about right. I’m going to stir it to get those lumps out. If you start stirring it’ll melt the rest of those pieces. I’m going to add to that ¾’s cup to a cup brown sugar.
We’re just going to pour that over our frozen rolls. If it doesn’t stick to them, that’s fine. So you’re ready to put these in your cold oven. It’s about bedtime so we’ll put them in now and let them rise overnight.
Now it’s the next morning. Don’t open the oven. Leave it cold. If you want to peek at your rolls, they’re going to be pretty high in the pan. If you see they’re coming over the pan you might want to push them in a little bit so you won’t get a mess in your oven. So what we’re going to do is bake the rolls in the cold oven at 325 degrees for 25 minutes. With stoneware you might want to go a little longer. It’s worse to overcook them than undercook them. So we’ll come back in about 25 minutes.
So it has been about a half hour and our rolls are looking good. We’ll take them out and let them cool for about 5 to 10 minutes, then we’re going to flip them over into the serving container. I’m going to use this Rada Cookie Sheet. I’m going to flip these over onto a platter. You can scrape out all that extra caramel. And there you have delicious easy easy caramel pecan rolls.

Super Soft & Fluffy Cinnamon Rolls Recipe
The softest cinnamon rolls I ever made! Before they used to turn out so dry and crummy, but now I don't use any other recipe than this one!
Printable RECIPE:
DOUGH (CLICK ABOVE LINK FOR METRIC MEASUREMENTS)
2½ cups all purpose flour
¼ cup sugar
2¼ teaspoons instant yeast
½ teaspoon salt
½ cup whole milk
3 tablespoons butter
2 tablespoons vegetable oil
1 teaspoon vanilla
1 egg
¼ cup water
FILLING
¼ cup butter soft
⅓ cup brown sugar
1 tablespoon cinnamon
pinch salt
CREAM CHEESE GLAZE
4 ounces cream cheese room temperature
2 tablespoons butter room temperature
¾ - 1 cup confectioner's sugar
½ teaspoon vanilla
INSTRUCTIONS
For the dough, combine in a large bowl the flour, sugar, instant yeast and salt. Heat milk in a small pot over the stove or in the microwave until quite warm. Add butter and stir until melted. Add vegetable oil and vanilla.
Cool milk mixture to lukewarm if necessary. You should barely be able to feel it when you stick your finger in it. Make a well in the dry ingredients and add milk mixture. Add egg and water. Mix by hand or using stand mixer until the mixture forms a very soft, sticky dough. Knead 6-8 minutes using the dough hook attachment or by hand. Add 2-3 tablespoons of flour if the dough looks too much like a thick batter, but it should still be very sticky. If the dough is very dry and easy to handle, add more water to make it sticky. Knead until it feels very smooth. Cover well with plastic wrap and proof for 1½ - 2 hours or until doubled in bulk.
While dough is rising, combine the brown sugar and cinnamon in a small bowl for the filling. Once the dough has proofed, roll out into a rectangle that measures 15x10 inches. Use a small amount of flour on your work surface to prevent sticking. Spread the soft butter over entire surface of the dough, then sprinkle on the brown sugar and cinnamon mixture. Starting from long edge closest to you, roll dough as tightly as you can. When you reach the end, pinch the seam very well to seal.
Using a sharp knife or a piece of string, cut the roll into 8-12 buns. Arrange evenly in a buttered parchment lined 14 x 8 inch pan and cover with plastic. Allow to rise in a warm place for another 45-60 minutes or until doubled in size.
Preheat oven to 375F/190C. Bake rolls for 18-22 minutes or until golden brown and fully cooked in the middles. Set aside to cool while making the frosting.
For frosting, cream together cream cheese and butter until smooth. You can do this by hand or with an electric mixer. Slowly add the powdered sugar, a couple of tablespoons at a time, creaming well after each addition. Add vanilla and beat until smooth.
Frost cinnamon rolls while they are still slightly warm but not too hot. The frosting should not melt. Serve immediately or keep well wrapped in the refrigerator for up to 5 days.
