How to Make Mom's Fried Apple Pies - Recipe 001.MOV
Mom's Fried Apple Pies.
1 -- 7 oz pkg of dried apples
1 -- Cup of sugar
2 -- Tablespoon of cinnamon
Put dried apples in pan and cover with water. Bring to a boil and then turn burner down low and simmer. You want to make sure almost all the liquid is gone from the apples then add your sugar and cinnamon. Cook apples for about another 15 minutes after the sugar and cinnamon is added then cool and refrigerate for 1 day.
Next day use the never fail pie crust.
Never Fail Pie Crust
1 ½ cups butter flavored Crisco shortening (In sticks)
3 cups flour
1 teaspoon salt
1 egg
1 teaspoon vinegar
5 tablespoon cold water
Mix together (Using hand pastry blender) shortening, flour and salt. Beat together egg, vinegar and water.
Spread flour out on wax paper then get your dough out of the bowl and roll out to about 2 inch thick 10 inch circle. Cut the circle in half take each half and cut them into halves those halves cut into 4 pieces when finished you should have 16 pieces of pie dough roll into balls. Then put 1 small dough piece on flour and put flour on top of the dough, using a rolling pin or small glass roll out to form a small pie (Don't make dough too thin). Put apples in the middle and fold the dough over the apples forming a small pie press with fork to close all the edges. Continue until all 16 pies are completed.
In a electric fryer (I prefer an electric fryer they cook more evenly you can use a skillet) put your vegetable oil in the pan and turn to 350 degrees or medium heat. Make sure the oil is hot and place your apple pies in pan and cook on each side until golden brown. Enjoy!

Apple Fritters Recipe (Recipe in our Vol. 4 Cookbook)
Glaze:
1 CUP POWDERED SUGAR
1 TSP. VANILLA
3 TBSP. MILK
Mix above ingredients well. Set aside for glazing.
Apples:
2 MEDIUM APPLES (CORED, PEELED AND CHOPPED)
3 TBSP BUTTER
1/2 TSP. CINNAMON
1/3 CUP SUGAR
Combine apples, butter, and cinnamon. Cook on stove top or in microwave until soft before adding
to dough batter below.
Dough:
1 CUP FLOUR
1 1/2 TSP. BAKING POWDER
1/2 TSP. SALT
1 TSP. CINNAMON (OPTIONAL)
1 EGG
1/3 CUP OF MILK
Mix above ingredients for dough. Stir in cooked apples.
Preheat a saucepan of oil for frying. OIL & 1/4 CUP BUTTER Add 1/4 cup butter to oil before dropping in batter. Drop batter into oil with a spoon. Brown on both sides - take out and place on cooling rack with parchment underneath. Pour glaze over fritters and enjoy!

For the hand pie dough
12 ounces (340 g) all-purpose flour
1/4 teaspoon (1/4 teaspoon) salt
6 ounces (170 g) cold unsalted butter cut into cubes or grated
1 large (1 large) egg
1 ounce (28 g) ice cold water
FRUIT FILLING RECIPE ►
16 ounces (453 g) fresh or frozen fruit (apples, peaches, blueberries, strawberries etc)
2 Tablespoons (2 Tablespoons) lemon juice you can use more or less to your taste
6 ounces (170 g) water or juice that complements the flavor of the fruit
1 ounce (28 g) unsalted butter
2 ounces (57 g) sugar white or brown
1/4 teaspoon (1/4 teaspoon) salt
1 ounce (28 g) ClearGel or 1/2 ounce cornstarch
1 ounce (28 g) water
