How To make Fresh Strawberry Cupcakes
1 3/4 c All-purpose Flour
1 t Baking Soda
1 c Sugar
1/2 c Chopped Walnuts
2 x Eggs
1/2 c Vegetable Oil
1/2 t Almond or vanilla extract
10 oz Pkg frzn sweet Strawberries*
* or 1 cup crushed fresh strawberries mixed with 3 T sugar Mix together flour, baking soda, sugar and nuts in a bowl. In another bowl, beat together eggs, flavoring and oil until well blended. Add strawberries and beat at slow speed of mixer until berries are partially broken. Beat in flour mixture slowly until smooth, but pieces of berries are still visible. Pour batter into greased muffin tins, filling to half. Bake at 350 deg F for 30 minutes, or until they test done. Or, bake in greased 9x5x3" loaf pan for at 350 deg F for 1 hour, or until done. Sprinkle with powdered sugar if desired.

For the cupcakes
¼ cup (60 ml) canola oil
2 tablespoons unsalted butter, softened
¾ cup (150 g) granulated sugar
2 eggs, room temperature
2 teaspoons vanilla extract
1 ½ cups (180 g) cake flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup (120 ml) buttermilk, room temperature
1 cup (150 g) chopped strawberries
For the frosting
1 cup (150 g) chopped strawberries
1 cup (226 g) unsalted butter, softened
½ teaspoon vanilla extract
pinch of salt
4 ½ cups (540 g) confectioners' sugar

Yields: About 62 mini cupcakes
(tip: cut recipe in half if wanting to do two berry flavors)
INGREDIENTS:
½ cup (1 stick) of softened butter
1 cup of sugar
2 Eggs
1 ½ cups of baking flour
1 ½ tsp of baking powder
½ tsp of salt
3/4 cup of buttermilk
1 cup of pureed strawberries
1 tsp of vanilla extract
frosting
1 package, 8oz of cream cheese
3-4 cups of powdered sugar (depending on preference of texture, more icing will make it thicker)
1/4 cup of pureed strawberries
10-12 small strawberries for garnish
1 Tbsp of peach or apricot jam
1 tsp of water
Preheat oven to 350. Add in your sugar and butter to your mixer, and mix on medium-high speed. Then add you eggs one at a time, until fully incorporated. Next add in your vanilla extract.
While that is mixing, sift together your flour, baking powder, and salt.
Add in your flour mixture and your buttermilk one at a time, into your mixer, starting and ending with your flour.
Lastly add in your strawberry puree, making sure to scrape down the sides of your mixing bowl to make sure all the ingredients are well incorporated.
fill your cupcake liners 3/4 of the way full and bake for 25-30 minutes. Let cool completely before icing.
For the frosting, add in your room temperature cream cheese and powdered sugar to your mixer and slowly mix together. Then add in your pureed strawberries. Again, always make sure to scrape down the side of your bowl, and then give it another mix to incorporate all of your ingredients.
Microwave your jam and water for no more than 30 seconds. then brush on your sliced strawberry garnish and place on top of your icing after you have piped your cupcakes.
