A quick, simple, crepe recipe that is sure to become your new breakfast favorite.
Total Cook Time: Approximately 15-20 minutes
*This recipe makes 7 SWEET crepes. Depending on how thick or thin you spread them.
The thinner you make them, the crispier they will be. For a less crispy, light, crepe; reduce cook time from 1-2 minutes to 30 seconds- 1 minute on low medium heat to prevent over drying*
For a more savory crepes, please omit the sweeteners.
Ingredients Used
- 2 cups all purpose flour
- 1/3 cup granulated sugar (adjust to your desired sweetness)
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
WET INGREDIENTS (all at room temperature)
- 2 large eggs
- 1/4 cup unsalted butter (melted and cooled down)
- 1/2 tsp pure vanilla extract
- 2 cups of Half and Half

Ingredients:
For the crepes:
1 cup (125g) All-purpose flour
1/4 teaspoon Salt
2 Eggs
1 tablespoon Sugar
1¼ cups (300ml) Milk
2 tablespoon (30g) Butter
Oil for cooking
1 teaspoon Vanilla extract (optional)
For serving (optional):
Nutella
Cream cheese
Banana
Strawberries
Directions:
1. In a large bowl sift flour, add salt, sugar and stir.
2. In a separate bowl whisk eggs, vanilla extract and milk, until combined.
3. Gradually add the milk mixture into flour mixture and stir until incorporated and smooth. Pour in melted butter and whisk until combined. Let stand at room temperature for 15-30 minutes (or in the fridge).
4. Heat a small non-stick pan over medium heat. Add butter or oil to coat.
5. Pour about 1/-3-1/4 cup of the crepe batter, swirling it to evenly coat. Cook for 1-2 minutes, flip and cook for 30 seconds. Remove from the pan and repeat with the remaining batter. Remember to grease the pan between ease crepe.
6. Serving suggestion: spread 1-2 tablespoons of Nutella, top with banana slices, fold and serve.
7. Serving suggestion 2: spread 1-2 tablespoons cream cheese/sour cream, top with strawberries, fold and serve.

CREPE RECIPE
Ingredients
1 Cup / 125g Flour
½ tsp Salt
2 Eggs
1¼ Cups | 310ml Milk
2 tbsp Melted Butter + extra for cooking
Instructions
In a medium sized mixing bowl combine the flour and salt together with a whisk.
In a seperate smaller mixing bowl whisk together the eggs and milk.
Pour the wet ingredients into the bowl with the dry ingredients, a ¼ at a time, whisking together until smooth.
Pour the melted butter into the crepe batter and whisk until combined.
Cover the crepe batter with plastic wrap and leave in the fridge to rest overnight or if limited for time 1 hour.
Heat a large frying pan or crepe pan over medium heat. Grease the pan with melted butter and pour in about a ¼ cup of crepe batter. Use a crepe tool or tip the pan around to spread the batter evenly.
Cook the crepe for 30 seconds to a minute or until the top has set, flip the crepe using a spatula and your hands and cook for a further 30 seconds on the remaining side.
Serve your crepes filled with your favourite filling.

Savory crepes ideas: easy to make but full of flavor!
Crepe gratin:
Ingredients: 250 g (8.8 oz) flour; 3 eggs; 2 tbsp melted butter; 2 cups milk; 3 potatoes, boiled, peeled, sliced into coins; 15 slices of prosciutto; 300 g (10 oz) cheese, shredded.
Instructions Preheat your oven to 200C/400F. Cover 20 cm/8 inch pan with parchment. Make crepe batter by whisking flour with a pinch of salt, butter and milk. Pour a ladle of batter on a preheated pan and cook on both side until golden. Arrange 4-5 crepes to cover the bottom and the sides of the pan. Layer potatoes to cover crepes completely, add teared up prosciutto and sprinkle some cheese on top. Cover with a crepe. Repeat all the layers to fill the baking pan completely and cover the top with crepes from the sides. Bake for 15 minutes, flip, remove the pan and the parchment and serve hot.

Salty crepes:
Ingredients: 2 cups flour; ½ tsp salt; 3 eggs; 2 cups milk; 1 small onion, chopped; 1 small carrot, chopped; 1 pound ground turkey; 1 garlic clove, minced; 1 cup tomato sauce; béchamel sauce; 4 slices cheese. Instructions To make salty crepes whisk flour and salt together. Add 3 eggs and start pouring milk gradually, while constantly whisking to prevent lumps from forming. When the batter is smooth fry on preheated nonstick pan for about 2 minutes (1 minute per side) or until golden. For the filling sauté onion and carrot in some olive oil for 2-3 minutes, until translucent. Add minced garlic clove, minced turkey, season with salt and pepper. Cook for 5-6 minutes more than pour tomato sauce in. Fill crepes with turkey filling as shown in the video. Place each crepe into a baking pan, spoon some béchamel sauce on top and cover with cheese. Bake at 180 C (350F) for 20-25 minutes.

Crepes dumplings:
Ingredients 24 slices of cheese 24 slices of ham 7 cooked potatoes (peeled and cut) 2 eggs 20 cl milk 150 g flour salt to taste Method Arrange cheese, ham and potatoes as in the video. Take the glass and make circles. Prepare the mixture for pancakes bake one side and then flip the pancake on the other side. Put the ham and cheese circle in the middle of the pancake and wrap it up. Bake this dumpling on both sides and transfer it to the pan. Top it with slice of cheese and bake for 15 minutes on 170 degrees.
