How To make Fish Fillets In Zucchinni Cream
1 1/2 ts Butter
1/2 c Sliced zucchinni
1 1/2 tb Sour cream
1 lb Fish fillets
1/3 c Butter milk
1 x Seasoning to taste
Melt butter in skillet, and gently fry fish until golden brown..(approx 4 mins). Remove from pan and keep warm. Saute the zucchinni in the same pan until cooked but not soggy, then stir in the butter milk sour cream and seasonings. Pour sauce over fish fillets, top with a little grated cheese, melt under boiler for a minute or two and serve. Recipe from: The Australian Heritage Cookbook. -----

Ingredients:
4 4oz Mahi Mahi filets
3 tbsp extra virgin olive oil
salt (to taste)
black pepper (to taste)
Lemon Garlic Sauce
3 tbsp salted butter (softened)
2 tbsp garlic (minced)
1 tbsp lemon juice
1 1/2 tbsp lemon peel (grated)
1 tbsp fresh parsley (chopped)
1 tbsp fresh chives (chopped)
kosher salt (pinch)
black pepper (pinch)
Instructions:
1. Preheat the oven to 375F. Pat dry any excess moisture off the fish fillet with paper towels until they are as dry as possible then sprinkle both sides with salt and pepper and set aside.
2. Then, prepare the lemon garlic mixture. In a small saucepan on low heat, combine all of the lemon garlic mixture ingredients and set aside.
3. In a large skillet on high heat, add the olive oil. Once the oil is hot, add the fish fillets to the pan and sear for about 3 minutes on one side then flip. Place the fish in a baking dish and roast for about 4-5 minutes. Pour the lemon garlic mixture over the cooked fish. Serve with extra lemon slices and fresh parsley.

Simple Cod with Zucchini Noodles
LEAN & GREEN (L&G) - OPTAVIA
Ingredients
2 frozen cod fish fillet (Costco -Miso glazed)
Fresh zucchini
Pam cooking spray
Salt & pepper (if desired)
Instructions
Shave zucchini into strips using a julienne peeler. Place zucchini on a greased sheet pan, and spread in a single layer. Bake at 375 degrees Fahrenheit for about 15 minutes. Season to taste as desired.
Place frozen miso glazed cod fillets on a greased sheet pan and bake at 375 degrees Fahrenheit for about 20 minutes. Let it stand for 2 minutes before serving. For those of you on Program, Do not use the extra miso glazed sauce which has separated during cooking (it’s tempting but skip that part )
For your L&G:
Leanest portion – 7oz. cooked cod
3 – servings of vegetable (2 servings of zucchini & 1 serving of your choice)
2 fats (avocado)
2 condiments (choose as per your liking)
Store leftover food in containers.

Squash and Fish: Squash Fish Mousse and Cod Wrapped in Zucchini, Stuffed Squash Blossoms
Today, I made squash and fish with squash blossoms! I had wild caught cod that my sister gave me! The vermouth sauce gave the cod the richness it needs and I really enjoyed it :)
I referred to chef Thomas Keller's recipe in his The French Laundry and Per Se cookbook for the squash fish puree.
I've recently been more into simple and elegant dishes like this, so I will be trying to do more dishes in this style in the future!
