2 c Unbleached flour
1/4 ts Salt
1/2 c Granulated sugar
1/2 c Almonds; ground
2 Margarine sticks; softened
1 Egg white; whipped
1 ts Vanilla
1 ts Almond extract
Preheat oven at 375. Prepare a baking sheet with cooking spray. In a mixing bowl, combine flour, salt, and sugar. In a blender grind the almonds to a powder-fine consistency. In a mixing bowl, combine margarine, egg white, vanilla, and extract. Mix dry ingredients with wet ingredients just until moistened. Pack dough into cookie press. Keep unused portion of dough in refrigerator. Press out desired shapes on prepared cookie sheet. Space the cookies 1" apart. Bake 10 to 12 minutes, until cookies are pale gold in color. -----

Today, I am sharing how to make 3 kinds of slice-and-bake Christmas cookies: Santa, Santa boots, and wreath cookies! Last year, I made slice-and-bake Christmas tree cookies. This time, I tried to simplify the process a little bit more so that you can make them with less effort! I hope you’ll enjoy watching the tutorial!

???? The Ingredients:
Makes about 50-55 cookies.
• Unsalted butter: 226g | 8oz (2 US sticks)
• Powdered sugar: 160g | 5.6oz
• Salt: 1/4 tsp
• Whole egg: 1
• Egg yolk: 1 (Save the egg white for egg wash)
• Cake flour: 350g | 12.3oz
• Almond flour: 70g | 2.5oz
• Colorings: Red, green, orange, and brown. (Or add any color you like!)
• Sprinkles: Your choice!
Egg wash:
• Egg white: 1
• Water: about the same amount as egg white
* All the 3 logs were about 15cm | 5.9 long and the diameter was about 4cm | 1.6. You can change the size and length as you like!
* Slice the logs with about 5mm | 0.2 intervals.
???? Bake at 350F/176C for about 7 mins. Turn the temperature down to 330F/165C and bake for another 7 minutes or more until the edge is slightly toasted.
*Adjust the time & temperature depending on the oven and the size of your cookies.
* Chill all the cookie dough in a fridge (preferably freezer) until right before baking so that cookies can hold nice shapes.

INGREDIENTS:
1 cup(226 grams) unsalted butter, softened
1 cup(200 grams) Granulated sugar
1 large egg
2 teaspoons(10 mL) vanilla extract
1/2 teaspoon(3 grams) coarse salt
3 cups(360 grams) all-purpose flour, spooned and leveled
red and green food dye

It's time to start off your shortbread education! Chef Anna Olson is a master at the fine art of baking the best shortbread, and she is hear to teach you all the steps you'll need to become a master yourself! Ingredients
1 ¼ cup unsalted butter at room temperature
1 cup icing sugar, sifted
1 ½ tsp vanilla bean paste (or extract, if paste is not available)
1 ½ cup all-purpose flour
⅓ cup cornstarch
¼ tsp salt
Directions
1. Preheat the oven to 325 F and line 2 baking trays with parchment paper.
2. Beat the butter and icing sugar until light and fluffy, about 3 minutes. Beat in the vanilla bean paste (or extract). It’s an important step to beat the butter and sugar well together when making shortbread – this ensures the shortbread will hold together and when you take a bite it will ‘snap’ and then melt away.
3. In a separate bowl, sift the flour, cornstarch and salt and add to the butter, mixing until blended and soft. Spoon the dough into a piping bag fitted with a large star tip (or into a cookie press). Pipe cookies about 1 ½-inches across onto the prepared baking trays and leaving an inch between each cookie. If you want a flatter cookie that spreads, bake right away. For a cookie that sits up and holds its shape, chill the piped unbaked cookies for 15 minutes before baking. Bake for 20 to 25 minutes, until the cookies just begin to brown lightly on the bottom. Cool the cookies on the trays before storing in an airtight container.
4. The cookies will keep up to a week.

RECIPE:
Cream Cheese Spritz Cookies
1 cup (2 sticks) butter, softened (not melted)
3 ounces softened cream cheese
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
3 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Gel food coloring (liquid changes dough consistency too much)
Preheat oven to 400°F.
Combine the flour, salt, and baking soda and set aside. Cream the butter and cream cheese very well with an electric mixer on its highest setting. Well creamed butter is the basis of great spritz recipes that melt in your mouth. Next add the sugar and cream again until light and fluffy. Add the vanilla and egg and mix thoroughly. Add the flour mixture a little at a time and mix until all ingredients are evenly combined , but do not over-mix as that can make spritz dough too stiff.
You can always troubleshoot a spritz dough by adding water a tablespoon at a time to stiff dry dough or adding flour a tablespoon at a time to overly sticky or soft dough. Perfect spritz dough has a soft malleable texture that is not too sticky or too stiff. Press with a cookie press.
Bake for 7 to 11 minutes. Check early and often as spritz cookies brown quickly. Let sit 2 or 3 minutes and move to cooking rack. Makes about 135 cookies.
Buttercream Decorating Icing
1/2 cup softened butter
4 1/2 to 5 cups powdered sugar- add more or less to get a good thickness
1 teaspoon vanilla extract
6 Tablespoons heavy whipping cream
Cream the butter with your mixer and add the other ingredients slowly, a little of each at a time and then really whip the mixture well. This should be fairly stiff, as it’s not for spreading on a cake but to make little stars for decorating.
DECORATING: Color your icing and use decorating tips to add decorations as shown.
