6 oz Unsweetened Chocolate 2 Sticks Unsalted Butter 6 Eggs 2 1/2 c Granulated Sugar 2 ts Vanilla Extract 1 3/4 c All-Purpose Flour
sifted 1/2 ts Salt 2 c Chopped Walnuts :
optional Preheat oven to 325. Butter a 10x15-inch baking sheet (jellyroll pan). Dust with flour and shake out excess. Melt the chocolate and butter in a small saucepan over VERY low heat, or in the top of a double boiler. Set aside to cool slightly. Beat the eggs, sugar and vanilla in a bowl with an electric mixer until thick and fluffy. Stir chocolate into the eggs. Add 1 3/4 cups flour and the salt; mix until just combined; do not overmix. Stir in the chopped walnuts, if desired. Bake in center of oven 25-30 minutes or until center of brownies is just set. Allow to cool completely before cutting into squares about 2x2 inches. Such a fun treat to try this summer, and so simple to make!
Ingredients- -1 tube sugar cookie dough -1 (3.4 oz) box instant vanilla pudding mix -1 cup cold milk -1 cup heavy cream -1 tsp coconut extract -1 cup crushed pineapple -1/2 cup shredded coconut -vanilla icecream
For Garnish- -whipped cream -pineapple wedges -toasted coconut -maraschino cherries
Place a scoop of sugar cookie dough into the cavities of a cupcake tray, then press down with a narrow glass (it helps to coat the glass in flour beforehand). Bake in a preheated oven at 350F for 15-20 minutes.
While the cookies are still warm, press the middle down again to form a “cup” shape. Allow the cookies to cool before filling.
To make the filling- Combine the vanilla pudding mix, milk, heavy cream, and coconut extract in a large mixing bowl. Blend until thickened, then chill in the fridge for 5 minutes. Fold in the crushed pineapple and shredded coconut.
To assemble- Add a spoonful of pudding mix to each cookie cup, and a scoop of ice cream. Top with toasted coconut, whipped cream, a pineapple wedge, a maraschino cherry, and an umbrella.
