How To make Eggless, Milkless, Butterless Cake
1 c Brown sugar
1 c Water
1 c Raisins
2 Level tbsp. drippings
1/2 ts Salt
1 1/2 c Sifted all-purpose flour
3/4 ts Soda
1/2 ts Ginger
1 ts Cinnamon
Cook together sugar, water, raisins, drippings and salt. Let cool. Sift together flour, soda, ginger and cinnamon. Stir into the cooled cooked mixture. Mix well. Bake 1 hour at 350F in a greased loaf pan. To make a delicious fruit cake add a cup of chopped dates, 1 cup mixed peel, 1/2 cup nuts or drop by teaspoonfuls on a cookie sheet and bake 15 minutes.Source: Heritage Recipes ch. -----

3/4 cup (150 g) Superfine (granulated) sugar
1 3/4 cup (245 g) All-Purpose Flour
1 tbsp (12 g) Baking Powder
1/4 tsp (2 g) Salt
1/2 cup (125 ml) Vegetable Oil
1 cup (250 ml) Water (room temperature)
1 tbsp (15 ml) Vanilla Extract
1 1/2 tbsp (10 g) Cocoa Powder
* It is very important to PREHEAT the oven. Bake when oven reaches the right temperature.
* All oven are not the same. Please adjust cooking time accordingly. If toothpick inserted in middle of cake comes out clean, cake is done.
* Mix dry ingredients and wet ingredients until JUST combined and dry flour is no longer visible. Do not overmix the batter or the cake will be dense.

This is a simple sponge cake recipe without butter or milk. This dairy-free cake is so easy to make you can do it by hand without a mixer. The advantages of an oil-based cake are that it is light, moist, easy to make, and delicious. Oil cakes are cheaper than butter and you can make this cake for those with milk sensitives or allergies. Baking times:
Bake all cakes until toothpick inserted in center comes out clean and center reads between 200F (93C) and 210F (99C.)
The below times are approximate as each oven is different. Start at the lowest time and check every 2 - 3 minutes if not done.
9×5 (23×13 cm) 45 – 55 minutes
For a 6- 8″ (15-20cm) pan, bake approximately 35-40 minutes.
For a 9″ (23cm) cake pan, bake approximately 25-30 minutes. This will be a thin cake.
For cupcakes, bake 15 – 20 minutes.
To make a dairy free frosting, try out one of these recipes! Cool cake completely before icing.

If using a darker pan, reduce temperature 25F (4C) and bake an additional 5 - 10 minutes to prevent over browning.

This vegan dessert is very easy to prepare. It is a soft cake witout eggs, without butter, and without milk. only stir the flour with orange juice and vegetable oil and bake. This is a soft fluffy cake you should try! I prepare it with coconut oil, but you can use any kind of vegetavle oil you like!
INGREDIENTS:
- 450 g of flour (pastry flour, soft flour)
- 550 g of orange juice
- 2 tbsp vinegar
- 1/2 tsp baking soda
- 20 g cacao
- 20 g of baking powder
- 100 g vegetable oil
- 200 g of sugar
- a pinch of salt
- orange zest
-1/4 tsp turmenic
- 50 g raisins
- powdered sugar

GRANDMA CHARLOTTE'S RECIPE:
Combine in a sauce pan, bring to a boil and boil for 3 minutes:
1 c. sugar
1 c. water
3/4 c. shortening or lard (could use butter)
1 c. raisins
1 t. ground cloves
1 t. ground nutmeg
After boiling for 3 minutes, remove from heat and let cool to room temperature. Pre-heat oven to 350.
Add to the cooled mixture (I mix the baking powder into the flour):
2 c. flour
1/2 tsp. baking powder
Mix this together then add 1 tsp. baking soda.
Pour into a greased and floured 8 in. or 9 in. square baking pan. Bake for 30 minutes at 350.
