Whether you are making a cake for a birthday party, wedding, or just a general get-together, it is hard to go wrong with this traditional vanilla cake recipe. I think this the best vanilla cake recipe out there as it has a buttery and perfectly even crumb that holds up well on its own but will practically melt in your mouth when you take a bite. I've updated my vanilla cake recipe for an even more tender crumb and foolproof bake no matter what climate or season you're in!

Blueberry White Chocolate Cream Cake
The blueberry white chocolate whipped cream cake recipe
My Instagram:
- The sponge cake (15cm/6in)
3 eggs
1 tsp vanilla extract
80g sugar
bring up to 40C over the double boiler
90g cake flour
20g butter
20g milk
bake at 170C for 40 minutes
- Blueberry jam
200g blueberry
2 tbsp water (30ml)
40g sugar
4g cornstarch
2 tsp lemon juice
a pinch of salt
- White chocolate cream
100g couverture white chocolate
100g warm heavy cream
420g cold heavy cream
Reserve 180g cream for the blueberry purple cream, the rest of the white cream divide into 2 parts (put 2/3 of it into the piping bag for the filling and keep 1/3 in the fridge for the icing)
- Blueberry cream
180g white chocolate cream
30g blueberry jam
a little purple food coloring (optional)
- Sugar syrup
75ml water
30g sugar

INGREDIENTS:
MILK - 2/3 CUP
BUTTER - 50GM
WHITE CHOCOLATE - 1/2 CUP
SUGAR - 1/2 CUP
FLOUR - 1 CUP
BAKING POWDER - 1 TSP
CURD - 1/4 CUP (substitute 2 eggs or 1/4 cup condensed milk)
SPRINKLES
FOR WHITE GANACHE:
WHITE CHOCOLATE - 1/3 CUP
WHIPPING CREAM - 3 TBSP

Vanilla sponge cake recipe
Chocolate and vanilla sponge recipe
white chocolate truffle cake:
Ingredients:
3 slices of vanilla sponge cake
100ml sugar syrup
50gm white chocolate chips.(optional)
Icing:
300g whipping cream
White Chocolate Ganache:
200g white chocolate compound
150g whipping cream
Almond slices for decoration(optional)
Instructions:
1. Prepare the Cake Layers:
Place one vanilla sponge cake layer on your serving plate or cake board.
2. Sugar Syrup:
In a small bowl, mix 100ml of sugar syrup.
Gently brush the top of the first cake layer with the sugar syrup to keep it moist. Set aside.
3. White Chocolate Ganache:
Chop the white chocolate compound into small pieces and place them in a heatproof bowl.
In a small saucepan, heat 150g of whipping cream over medium heat until it begins to simmer. Remove from heat.
Pour the hot whipping cream over the chopped white chocolate. Let it sit for a minute to soften the chocolate.
Gently stir the mixture until the chocolate is completely melted and the ganache is smooth. Allow it to cool slightly.
4. Prepare the Icing:
In a mixing bowl, whip 300g of whipping cream until stiff peaks form.
5. Assemble the Cake:
Spread a layer of whipped cream over the first cake layer with the sugar syrup.
Place the second vanilla sponge cake layer on top and brush it with sugar syrup.
Spread another layer of whipped cream on top of the second cake layer. and add Chocolate chips and white chocolate ganache.
Place the third vanilla sponge cake layer on top and brush it with sugar syrup.Spread another layer of whipped cream on top of the cake layer. and add Chocolate chips and white chocolate ganache.
6. Apply White Chocolate Ganache:
Pour the cooled white chocolate ganache over the top of the assembled cake.
Use an offset spatula to gently spread the ganache, allowing it to drip down the sides of the cake for a rustic look.
7. Decorate:
Press almond slices onto the sides of the cake for decoration.
You can also sprinkle some almond slices on top for an extra touch.
8. Chill and Serve:
Place the assembled cake in the refrigerator for a few hours to allow the ganache to set and the flavors to meld.
Once the cake is chilled and set, it's ready to be sliced and served.

Makes 5-6 servings
Ingredients:
5oz (140g) White chocolate
1 cup (240ml) Heavy cream, cold
4oz (115g) Cream cheese
White chocolate shavings, optional
Directions:
1. Chop the chocolate, transfer to a large heat-proof bowl, melt in the microwave (in a30 sec pulses) or over a double boiler.
2. Add the cream cheese to the melted white chocolate and beat until combined. Set aside to cool.
3. In a large bowl, beat heavy cream until stiff peaks form.
4. Gradually fold whipped cream into the white chocolate mixture.
5. Transfer the mousse to a piping bag. Pipe into serving dishes and refrigerate for at least 4 hours.
6. Before serving garnish with white chocolate shavings (optional).
