1/4 cup Finely chopped celery
2 tablespoon Finely chopped onion
1 Egg slightly beaten
1/4 teaspoon Salt
1/8 teaspoon PeppeR
Hamburger buns -- split & -toasted Choice of toppings: Tartar sauce Cheese Thousand Island Dressing
DRAIN SALMON; RESERVE 3 TBSP. LIQUID. FLAKE SALMON. IN MEDIUM BOWL, COMBINE SALMON, LIQUID, CRUMBS, CELERY, ONION, EGG, SALT & PEPPER; MIX WELL. FORM INTO 5 PATTIES. IN PREHEATED LIGHTLY GREASED SKILLET OVER MEDIUM HEAT, SAUTE PATTIES ABOUT 3 MINUTES ON EACH SIDE. SERVE ON HAMBURGER BUNS WITH CHOICE OF TOPPINGS. This recipe came off a can of Libby's Salmon. Keto Salmon Cakes
Ingredients:
2lb Fresh Salmon
1 Tomato, chopped
1/2 cup Green Pepper, chopped
1/2 cup Onion, chopped
1/4 cup Celery, chopped
2 cloves Garlic, minced
2 Eggs, beaten
1/2 cup Almond flour
1 Tbsp Dijon Mustard
1 Tbsp Olive oil
Salt
Black Pepper
Instructions
1. Cut the salmon in the small pieces.
2. Mix well all ingredients.
3. Divide the mixture into 8 equal parts, shape each into an individual patty, then roll in almond flour and place on the baking sheet with the parchment paper.
4. Bake for 25 minutes at 400F.

LOW CARB SALMON CROQUETTES PATTIES
Makes 6 Croquettes/Patties
Macros are Per Croquette
Calories 193

1 15 oz can Pink Salmon (drained)
1/2 Cup almond flour
1/4 cup onion diced very small
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dill
2 tsp. lemon juice
2 TB Mayo
1 Egg (beaten)
In a large bowl pour out the drained salmon from the can. Remove bones and skin. (Optional) Add in sifted almond flour, onion, dill, salt, pepper and lemon juice and stir well. Add in beaten egg and mayo. Stir very well. Place in refrigerator for 15 to 30 minutes. Use a 1/3 cup measure to measure out each croquette/patty. Shape and place on a plate and repeat until you have six croquettes/patties. In a frying pan or skillet, heat your oil. I used avocado/coconut oil mixed because they have a higher smoke point. However, you can use the oil of your choice to fry them in. Turn your heat up just above medium until your oil is melted and hot. Turn the heat back down to just below medium and add your croquettes/patties. Fry on one side for five minutes then flip and cook five more minutes on the other side. If you want your croquettes/patties to be more brown and crispy just continue to flip them until you have reached your desired level of crispness.
Remove them from the pan and let cool for a few minutes before serving. Then serve and enjoy! They are delicious!

4. Fry it till crisp.
For the Lemon Butter sauce
5. In the same leftover oil, add chopped garlic & 2 squeezed lemon juice.
6. Add 4 tsp. of salted butter.
7. Mix well and allow it to boil.
9. Add chopped coriander.
Pour the lemon butter sauce over the pan fried fish fillets.
Serve it with fresh salad & cauliflower mash ( recipe will come) Enjoy it as a Dinner meal.
