3 Cups Seasoned Mashed Potatoes 1 1/2 Cups Sliced Fresh Mushrooms 1/4 Cup Chopped Onions 2 Tablespoons Butter 1 Teaspoon Lemon Juice 1/4 Teaspoon Salt Dash Ground White Pepper 1/2 Cup Sour Cream 1. Preheat oven to 350 degrees F. 2. Place half of the mashed potatoes in a buttered 9-inch pie plate. 3. Saute the mushrooms and onion in the butter. Add the lemon juice, salt and pepper and spoon over the potato layer. Spread with sour cream. Top with remaining potatoes. 4. Bake for 45 minutes, until brown. To serve, cut into wedges.

In a large skilled brown ground bison with oil, onion, celery, garlic and pepper. Drain and place in a 13 x 9-inch baking pan. Add the potatoes, corn, cream soup, milk, and sour cream. Cover with aluminum foil and bake at 375 fro 60-minutes. Uncover and sprinkle with cheese. Return to oven for 10 minutes, until the cheese is golden brown.

Poached Chicken in Mushroom Broth Serves x 2 - 20gm Dried Mushroom - 1 Litre Boiling Water - 1 Banana Shallot (or small onion) fine chopped - 1-2 Garlic Cloves Minced - 1/2 Inch Fresh Ginger Minced - 1 - 2 Red Chilli (depends how hot you like your food) - 1 Stick Lemon Grass (optional) - 7gm Fresh Coriander - 5gm Fresh Basil - 2 Tablespoons Soy Sauce - 100gm Fresh White or Chestnut Mushrooms Sliced - Choi Sum, Pak Choi or other Green Vegetable eg Cavelo Nero - Squeeze Lemon or Lime Juice to finish - 2 Chicken Breasts
