How To make Date Butterscotch Brownies
1/4 c Shortening
1 c Packed brown sugar
1/2 ts Vanilla
1 Egg
3/4 c All-purpose flour*
1/2 c Chopped walnuts
1 ts Baking powder
1/4 ts Salt
1/2 c Chopped dates
*if using self-rising flour Omit baking powder and salt. Recipe by: Betty Crocker's Cookbook Heat oven to 350 degrees. Grease square pan, 8 X 8 X 2 inches. Heat shortening in 1-1/2-quart saucepan over low heat until melted; remove from heat. Mix in brown sugar, vanilla and egg. Stir in remaining ingredients. Spread in pan. Bake 25 minutes. Cut into 2-inch squares while warm. 16 brOWNIES; 145 CALORIES PER brOWNIE. -----

On this episode of Eating with Andy learn how to make an Aussie favourite that's perfect for chilly weather, Sticky Date Pudding with a Bourbon Butterscotch Sauce. The cake is so gooey with deep caramel notes thanks to the dates and the sauce has a rich, buttery flavour with hints of oak and vanilla from the Bourbon.
INGREDIENTS (serves 8-10)
340g dates, pitted and roughly chopped
1 tsp bicarb soda
125g unsalted butter, room temperature
⅓ cup white sugar
2 eggs, room temperature
1 tsp vanilla extract
1 ¼ cups plain flour
1 tsp salt
1 ½ tbsp baking powder
Bourbon Butterscotch Sauce
185g unsalted butter
1 cup brown sugar
½ cup thickened cream
¼ tsp salt
2 tbsp bourbon (I used Makers Mark)
2 tsp vanilla extract
Whipped cream to serve
TIPS
- I used a 23cm round cake pan
- Make sure you roughly chop your dates (in the video it doesn't look like they're chopped).
- This cake reheats very well. Just place it in the microwave (with sauce and everything) and eat it warm.
- The sauce is also fantastic on its own over ice cream.

BETH'S BUTTERSCOTCH BLONDIE RECIPE
Makes 9 Blondie Sqaures
INGREDIENTS:
1 cup (240 g) butter
½ cup (100 g) white sugar
3/4 cup (135 g) brown sugar
2 eggs
1 tsp (5 ml) vanilla
1 3/4 (210 g) cups flour
½ tsp (2.5 ml) baking soda
1 tsp (5 ml)salt
½ cup (75 g) walnuts
1/4 cup (40 g) butterscotch chips
METHOD:
Preheat oven to 350F (176C).
Cream together the butter and sugars with an electric mixer until pale and fluffy, about 5-7 minutes.
Add eggs one at a time, scraping down the bowl between additions. Add vanilla. Beat to combine.
In a separate bowl whisk together the flour, baking soda, and salt. Whisk to combine.
Add flour mixture to butter mixture, in thirds, beating between each addition and scrapping down the bowl as needed.
Add butterscotch chips and walnuts and beat down the bowl as needed.
Transfer to a 9 x9 pan that has either been sprayed with baking spray, or lined with parchment paper.
Bake for 35 minutes until golden brown and set.
Allow to cool and then cut into 9 squares.

This brownie recipe will quickly become a favorite. This is an alternative to the traditional chocolate or fudge brownie. Its a yummy comfort food and it is a quick and easy dessert. Our family loves it! Recipe below!
Blondie Brownies
1 stick of butter
2 c packed light brown sugar
2 eggs
1 1/2 c flour
2 t baking powder
1 t salt
1 t vanilla
1 c coarsely chopped nuts (optional)
Preheat oven 350. Melt butter on stove top or in the microwave. If melted on stove top remove from heat before continuing. Add brown sugar and stir until well blended. Cool. Add eggs and mix well. Stir in dry ingredients, then add vanilla and nuts. Spread in greased 8x8 square baking pan. Bake until a medium golden brown and toothpick comes out clean. Cool in pan and cut into squares.

• 8 tablespoons (115 grams or 1 stick) unsalted butter
• 1 cup (190 grams) lightly packed dark or light brown sugar
• 1 large egg at room temperature
• 1 teaspoon vanilla extract
• 1/4 teaspoon almond extract, optional
• 1/4 rounded teaspoon fine sea salt, decrease a little if sensitive to salt
• 1 cup (130 grams) all-purpose flour
• 1 cup (170 grams) chocolate chips
• 1/2 cup optional extras like toasted nuts, dried fruit, or shredded coconut
• Optional: 1/2 teaspoon baking powder, see tips below
➡️ The recipe and video have been updated to make directions clearer and include an optional 1/2 teaspoon of baking powder for slightly thicker blondies (explained in the tips section and article on Inspired Taste).
➡️ Baking powder: The original recipe does not add baking powder and we leave it out. These are intended to be dense and a little fudgy. If you are looking for a slightly risen interior, whisk 1/2 teaspoon baking powder with the flour before adding to the batter, and use at least 1 cup of add-ins (like chocolate chips).
