How To make Crockpot Peppered Meat Loaf
Ingredients

ground chunk

onion, finely chopped

tomato sauce, can
3/4
cup
saltine crackers, crushed
2
teaspoon
worcestershire sauce
1/4
teaspoon
pepper
1 1/2
teaspoon
dry mustard
1/2
pound
bulk sausage
3
each
garlic cloves, minced
1/2
cup
ketchup
2
each
eggs
2
teaspoon
seasoned salt
2
each
potatoes, peeled, thinly sliced
1/3
cup
brown sugar
1/2
teaspoon
nutmeg
Directions:
Combine all loaf ingredients except potatoes and suce ingredients. Mix well and shape into a loaf. Place potatoes in bottom of crockpot. Top potatoes with meatloaf. Pour sauce over all. Cover and cook on low for 8 to 12 hours.

Slow Cooker Taco Meatloaf Stuffed Peppers
RECIPE:
INGREDIENTS:
The sauce for under the peppers:
1½ cup salsa
For the peppers
1 lb. ground beef
4-5 bell peppers any colors (4 large or 5 medium sized)
½ cup diced white onion
1 large egg
¼ cup sour cream
¼ cup salsa
1.25 oz. taco seasoning mix (1 packet)
15 saltine crackers crushed
½ cup minute rice not cooked
1 cup shredded cheddar cheese add this on top at the end
Slow Cooker Size:
6- quart or larger
INSTRUCTIONS:
Add the 1½ cups salsa to the slow cooker.
Cut the tops off the peppers remove and discard the seeds. Don't throw away the tops, chop up the top of the pepper and add to the meat loaf filling. In a medium sized bowl add the meat, diced tops from the bell peppers, onion, egg, sour cream, salsa, taco seasoning mix, crushed saltine crackers and rice. With clean hands mix the meat loaf ingredients together until just combined, don't over mix.
Stuff the peppers with the meat loaf mixture.
Place the stuffed peppers on top of the salsa.
Cover and cook on LOW for 5 hours without opening the lid during the cooking time.
After cooking time is done add a ¼ cup of cheese to each pepper. Add the lid back on the slow cooker and let the cheese melt, it will only take a few minutes.
Serve and enjoy!

BASIC MEATLOAF RECIPE
INGREDIENTS
1 lb ground beef
1 cup bread crumbs
1/2 onion, chopped
1/2 cup milk
1 egg
2 tbsp ketchup
1 tbsp Worcestershire
1 tsp parsely
salt
pepper
1/2 tsp garlic powder
FOR THE GLAZE:
1/4 cup ketchup
2 tbsp light brown sugar
1 tsp vinegar
DIRECTIONS
Tear off a large strip of aluminum foil (heavy duty works well), and press it into the bottom and up two of the sides of a 6 quart or larger slow cooker. Spray lightly with non-stick cooking spray, then set aside
Mix all the ingredients for the meatloaf and shape into an oval. Place inside slow cooker and cook on low 6 hrs.
When finished cooking, carefully lift out the meatloaf, using the foil overhang, and place on a baking sheet. Top with 2/3 cup of the glaze and broil until glaze is sticky and bubbly.
Serve sliced, with remaining glaze sauce served on the side for drizzling.
INGREDIENTS FOR MY MEALOAF
2 lbs lean ground beef
1 1/2 sleeves of Club crackers
1 small onion, chopped
1/2 chopped bell pepper, any variety
3/4 cup milk
2 eggs
1 can tomato paste
2 tbsp mango chutney
2 tsp soy sauce
fresh parsely, chopped, about 2 tbsp
1 tbsp mustard
INGEDIENTS FOR THE GLAZE:
1/4 cup ketchup
2 tbsp mango chutney
1 tbsp vinegar

SAUCE
1 cup ketchup
1/4 cup A-1 steak sauce
2 Tbsp dark brown sugar
1 Tbsp diced chipotle peppers in adobo sauce
1/4 tsp cracked black pepper

Crock-Pot Mexican Meat Loaf Recipe
Ingredients:
¼ cup rice
1 cup bread crumbs
2 lbs. ground beef
1 onion (chopped)
2 eggs
1 cup salsa
1 cup shredded pepper jack cheese
1 teaspoon cayenne pepper
1 tablespoon fresh thyme
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
1 teaspoon salt
Preparation:
1. Add 1 cup boiling water to rice. Wait 30 minutes then drain water.
2. Make a container from aluminum foil so you can easily remove the meatloaf when done.
3. Mix ingredients together to form a loaf.
4. Cover and cook on high for 4-5 hours or on low for 8-10 hours.
5. Lift the foil to remove the meat loaf from the crock pot.
