Slow Cooker Scalloped Potatoes with Ham
*This recipe makes a mega amount…be sure your slow cooker is big enough, mine clearly wasn’t. You can cut the recipe by ½.
Ingredients
8 cups raw potatoes sliced
1 ½ medium onion sliced
1 ½ teaspoon salt
1 lb cooked ham, sliced or cubed
Making the roux
6 tbsp butter
6 tbsp flour
1 ½ tsp salt
½ tsp thyme
¼ tsp garlic powder
3 cups milk or half and half
2-2½ cups shredded strong cheddar cheese
Instructions
Layer potatoes, onion, salt, and ham into crock pot. Make a roux with butter and flour in a sauce pan. Cook the roux for about 3 minutes be careful not to brown the roux. Slowly add milk then cheese. Add the garlic, salt, pepper and thyme. Cook over low heat until thickened. Pour over potato/ham mixture in crock pot, and gently stir. Cover and cook on Low 6 to 8 hours or High 4 to 5 hours. Check to make sure the potatoes are fork tender if they are not then cook longer.

Easy slow cooker scalloped potatoes recipe. Perfect scalloped potatoes for Thanksgiving, holidays, or any potluck.
How to make scalloped potatoes in a slow cooker
Ingredients
1 1/2 cups heavy cream or half and half
4 cloves garlic minced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried basil
1/4 teaspoon nutmeg
2 pounds russet potatoes peeled and cut into 1/8-inch thick slices
Kosher salt and freshly ground black pepper to taste
1 cup shredded Gruyere cheese
1 cup shredded cheddar cheese
1/4 cup freshly grated Parmesan
1/2 teaspoon fresh rosemary
Chopped parsley
Instructions
In a medium saucepan over medium heat, whisk together heavy cream, garlic, thyme, rosemary, basil and nutmeg until heated through, about 1-2 minutes.
Next, add a layer of the sliced potatoes to a 4-qt slow cooker in an overlapping pattern and season with salt and pepper.
Pour 1/3 cup of the cream mixture over the potatoes and sprinkle some shredded Gruyere and cheddar cheese on top. Repeat with remaining potato slices, cream mixture, and Gruyere and cheddar cheese to create 2 more layers.
Cover and cook on high heat for 4-5 hours, or until the potatoes are tender.
Sprinkle parmesan cheese on top. Cover and cook again until melted, about 5-10 minutes.
Uncover and let potatoes rest for 15 minutes, before serving.
Garnish with chopped parsley and rosemary.

Easy Slow Cooker Scalloped Potatoes and Ham!
Recipe: If you are looking for a quick and extremely easy slow cooker / crockpot recipe for a week night, you've come to the right place! Using pantry staples, we are going to make a smooth and creamy scalloped potatoes and ham with very little effort. And because I haven't used my slow cooker (crockpot) in a while, I thought I would bust it out and try out this brand new Silicone Slow Cooker Liner from Kocwell. And while the product itself wasn't completely ideal for my crockpot (it said in the listing 7-8 qt oval, and I used a 7 qt oval), the recipe is still a good one!
If you have an 8qt oval Slow Cooker, this liner might be just what you are looking for. However, if you have a 7qt oval, I wouldn't try it or expect that it will be too big and baggy ;) (affiliate link):

Slow Cooker Scalloped Potatoes
Ingredients:
8 potatoes sliced thinly and salted
1 chopped onion
2 cups of ham, cooked and diced
1 ½ cups of cheese (cheddar, colby jack, or your choice)
10.25oz can of cream of chicken soup (you can use cream of mushroom too)
⅔ cups of whole milk (use half and half for a creamier sauce)
½ tsp thyme
¼ tsp pepper
Sauce Directions:
Mix together cream of chicken soup, milk, thyme and pepper then set aside.
Assembly Directions:
Arrange half of your sliced potatoes in the bottom of your slow cooker.
Spread half the onions, ham, and cheese over the top.
Arrange the second half of your sliced potatoes over the top of your cheese layer.
Then spread the remaining onions, ham, and cheese over the top of those potatoes
Carefully pour the sauce mixture evenly over the top of your cheese (depending on how big your crockpot is, you may need to use a knife to allow the mixture to seep down the side, but get the whole mixture in there).
Cook on HIGH for 3-4 hours of LOW for 6-8.
Serve with sour cream and chives.

Slow Cooker Scalloped Potatoes and Ham
This is a simple layered dish that goes in to your slow cooker and spends either 4 hours in high or 6-8 hours on low. Test with a fork to determine if the potatoes are cooked. If they are fork tender the dish is ready.
I layer in onions and potatoes. It seems that red potatoes or Yukon Gold hold up best to slow cooking so that’s what I use. I sprinkle cheese in between the layers using about 2 cups of cheese for the whole dish but you could add more if you like it cheesier. I used about 1 ½ cups chopped ham between the layers. You can get creative here.
For the sauce I added:
1-15 ounce can of creamed corn but you could leave that out or add a different vegetable if you like
1 can cream of celery soup
1 can of cream of mushroom soup
1 ½ cups of milk
1 tsp garlic powder
½ tsp salt
¼ tsp black pepper.
Mix those ingredients together and pour over top of the layers of potatoes, onions and ham. Put the liner back in the base of the slow cooker and cook 4 -5 hours on high or 6-8 hours on low. I would let it sit for a half hour before serving just to firm up a bit.
