Instant Pot American Chop Suey
This is NOT a Chinese dish. By any stretch of the word. Don't @ us! This is an American dish that got sort of famous in the mid twentieth century. It need a comeback because it's just such great comfort food.
It's actually a New England dish. A pasta casserole, to be honest, served at diners in Maine and elsewhere before it made its way across the United States. We're not even sure why it's called chop suey except maybe from the idea that everything is chopped and thrown together. Or maybe because it's a pasta casserole without cheese. (Hey, it IS dairy free, if that's a concern.) In any case, this is comfort food deluxe, a kid-friendly meal. Best of all, you can make it right out of the freezer with a pound of ground beef, a can of tomatoes, some frozen chopped onions, and not much more effort that dump, stir, and cook under pressure. You don't even have to sauté things. How easy could it get?
A couple of notes on the recipe. First, this recipe was written specifically for the Instant Pot. If you're using a stove top pressure cooker, you can probably follow these timings, except you'll want to add 2 1/2 cups of broth to the dish. And if you're using any other model of electric pressure cooker, you'll want to increase the cooking time to 7 or 8 minutes under pressure.
Here's the ingredient list (with some subs, if you're interested):
One 28-ounce diced tomatoes PACKED IN JUICE (not puree)
2 cups beef or chicken broth
1/2 cup frozen chopped onions (do not thaw) or 1 small yellow onions, peeled and chopped
2 teaspoons onion powder
1 teaspoon mild paprika
1 teaspoon garlic powder
1/2 teaspoon ground cinnamon
Up to 1/2 teaspoon red pepper flakes
1/2 teaspoon table salt
1 pound FROZEN ground beef
12 ounces dried raw elbow macaroni
4 ounces (1 cup) frozen chopped bell pepper (do not thaw), or 1 medium bell pepper (any color), stemmed, cored, and chopped
