How To make Creme Constance
1 1/2 oz Butter
1 1/2 oz Onion; finely chopped
1 ts Curry powder
1/2 oz Flour
15 fl Milk
15 fl Chicken stock
5 tb Coconut milk
Salt & pepper
TO FINISH:
4 tb Cream
4 sl Lemon

IMH Melt butter, and soften the very finely chopped onion over gentle heat. When tender, but not browned, add curry powder (which should be of good quality, and ideally home made) and continue cooking 1-2 mins. Stir in flour and cook to make a roux for a further minute or so. : Remove from heat and when slightly cooled, gradually stir in stock and milk. Return to heat and stir while bringing to the boil. When boiling, reduce heat and simmer gently 15 minutes or so. Add coconut milk (or creamed coconut if the milk is unavailable) and stir to incorporate. Strain, correct seasoning and reheat. Gaufres de Cyril Lignac, croustillantes et faciles à faire - recettes de cuisine Odelices
Pour le goûter, quoi de mieux que de bonnes gaufres maison ? Je fais depuis des années la recette du chef pâtissier Cyril Lignac et elles sont délicieuses. Cuites dans un gaufrier bien chaud, elles seront très croustillantes à la sortie du four, avec un goût de crêpes dentelle. La pâte est un peu liquide alors attention de ne pas trop remplir le gaufrier.
- si vos gaufres accrochent : huilez le gaufrier
- Si la gaufre s'ouvre en deux et reste accrochée des deux côtés : faites cuire la gaufre plus longtemps avant d'ouvrir le gaufrier
La recette des gaufres de Cyril Lignac :
Mélangez 250 g de farine, 40 g de sucre et 1 sachet de levure chimique (10 g). Faites un puit au centre pour incorporez les 2 oeufs battus puis ajoutez peu à peu 50 cl de lait. Vous pouvez ajouter une pincée de sel.
Laissez reposer la pâte 1 à 2h au réfrigérateur.
Faites cuire les gaufres 3 à 5 min dans votre gaufrier (4 min et 30 secondes pour moi !).

Ingredients:
Doodh (Milk) full cream ½ kg
Cheeni (Sugar) ½ Cup
Directions:
In saucepan,add milk,sugar,mix well and bring it to boil.
Cook on low flame for 35-40 minutes or until thickens and mix continuously.
Let it cool down.
Can be stored in dry & clear jar for up to 1 week in refrigerator.
