chopped 1 package Crawfish tails 1 teaspoon Salt 1/2 teaspoon Pepper 1/2 pound Cheddar cheese 1/2 Jar cheese sauce 1 cup Milk 2 Egg yolks :
beaten 1 teaspoon Cornstarch 1 tablespoon Water In saucepan combine margarine, celery, bell pepper, parsley and onion over low heat. Saute for 5 minutes. Lower heat and simmer for 10 minutes. Add crawfish talks, salt and pepper. Let simmer for 10 minutes. In double boiler combine cheese, cheese, sauce, milk and egg yolks. Mix cornstarch with water. Add to cheese mixture and let boil for 5 minutes. Pour crawfish mixture into cheese mixture and blend well. Pour into casserole dish. Bake at 350 for 10 minutes. Serve hot. NOTE: I would serve over hot rice or pasta. (wrv)

SHRIMP AU GRATIN RECIPE Serves 4
White Roux and Cheese Sauce Ingredients 3 tablespoons butter 2 tablespoons flour 2 cups Half & Half 1/2 teaspoon nutmeg 1 cup shredded cheddar cheese 1 cup shredded mozzarella cheese more cheese for topping each casserole dish
Shrimp 2 tablespoons butter 1 tablespoon olive oil 1 cup each - diced onion, celery, and bell pepper 1 teaspoon minced garlic 1 pound small/medium shrimp (peeled and deveined) Dash salt, black pepper, and Tony’s Creole Seasoning
Garnish: chopped green onions
Begin by melting 3 tablespoons butter and whisk in the 2 tablespoons flour. Heat for 2 minutes. Pour in the Half & Half and mix well. Heat mixture for about 5-10 minutes or until milk has thickened. Add in the nutmeg. Keep stirring to prevent burning milk on bottom of the pan. Turn off the burner and mix in the cheddar cheese and mozzarella cheese.
Preheat the oven to 425F.
Next, melt 2 tablespoons butter and 1 tablespoon olive oil on medium heat in a heavy skillet. Add the onion, celery, and bell pepper to skillet and sauté until the vegetables are softened. Add in the minced garlic, shrimp, and sprinkle salt, black pepper, and Tony’s. Cook until shrimp are pink - just a few minutes.
Finally, mix the shrimp mixture into the cheese sauce using a slotted spoon. Prepare a casserole dish(es) by spraying with oil. Spoon equal portions into the dishes. Top with more cheese. Bake for 20-25 minutes until bubbly and brown on top. Garnish with chopped green onions. Allow to sit for 5 minutes or so before serving. Enjoy with a baked potato or hot buttered rolls.
You can also use this recipe for a hot shrimp dip with crackers or French bread rounds.

This can be made with shrimp, crawfish or lobster, Recipe:
INGREDIENTS 1 lb white crab meat (I used Dungeness) 2 egg yolk, beaten 3 tblsp flour 1 stick butter 1 cup chopped onion 1/2 cup chopped celery 1 13oz can of pet milk 1/2 cup american cheese 1/2 cup swiss cheese red pepper to taste (I used Cajun season all)
PROCEDURE Melt butter, add flour, stir until blended well. Add onion and celery, cook on low fire until onions are tender. Add pet milk and egg yolks. Stir well until blended. Add cheeses, salt and red pepper and cook on low until cheeses are melted. Stir in crab meat, cook low about five minutes. Pour into individual microwave dishes. Heat on high until bubbily. Top with slices of American cheese. Return to microwave until cheese is melted on top.

The Very Best Potatoes Au Gratin Recipe
Thinly sliced potatoes are combined with butter, cream and tons of cheese before being baked to a bubbly, golden perfection. Simple to prepare and fantastic for entertaining. ----------------------------------------FULL RECIPE BELOW--------------------------------------
INGREDIENTS 3 ounces Butter 1 garlic clove minced 4 tablespoons cornstarch 1 teaspoon kosher salt 1/2 teaspoon fresh ground pepper 2 cups low-fat milk 2 cups shredded white cheddar 5 cups thinly sliced yukon gold potatoes INSTRUCTIONS Preheat oven to 350°. In a large saucepan, melt the butter over low heat. Stir in the garlic and cook 1 minute. Whisk in the cornstarch, salt and pepper until smooth. Gradually add the milk and bring to a boil. Cook the sauce stirring constantly until thickened, approximately 2-3 minutes. Remove from heat and stir in 1 1/2 cups of the cheese until melted. Stir in the potatoes. Transfer to a 2 quart baking dish coated with cooking spray. Sprinkle with the remaining cheese. Cover and bake 30 minutes. Uncover and bake an additional 30-45 minutes or until the potatoes are tender and the sauce is golden brown and bubbling. Remove from the oven and allow to stand 5-10 minutes before serving.
