How To make Cranberry Buttermilk Scones
3 c Unbleached a-p flour
1/4 c Plus 2 t sugar
1 3/4 ts Baking powder
1/4 ts Salt
10 tb (1 1/4 sticks) chilled,
-unsalted butter, cut into -small pieces 3/4 c Dried cranberries
1/2 c Buttermilk
3 lg Eggs
1 t Water
Position rack in center of oven and preheat to 375. Butter two 9" diameter cake pans. Combine flour, 1/4 c sugar, baking powder and salt in large bowl. Add butter, rub in with fingertips until mixture resembles coarse meal. Add cranberries. Whisk buttermilk and 2 eggs in small bowl. Stir into dry ingredients. Turn out on lightly floured surface. Knead gently just until soft dough forms. Divide dough into 2 pieces. Form each piece into ball. Transfer each ball to 1 prepared pan; press out dough into 8" diameter round. Using sharp knife, score top of each round into 8 wedges. Whisk remaining egg with 1 t water in small bowl. Brush mixture over scones. Sprinkle with 2 t sugar. Bake scones until golden, about 30 minutes. Cool 5 minutes. Invert scones onto platters. Turn right side up. Cut along score marks. Serve warm. From Bon Appetit Dec. 1/2 cup (100g) granulated sugar
1/2 teaspoon salt
2 and 1/2 teaspoons baking powder
1/2 cup (115g) unsalted butter, frozen
1/2 cup (120ml) heavy cream or buttermilk
1 large egg
1 and 1/2 teaspoons vanilla extract
1 cup cranberry and pecan
# If you don't have heavy cream, you can make a buttermilk easily as below.
1 cup milk
1 table spoon squeezed fresh lemon juice

INGREDIENTS
▪︎ 125g whole wheat flour, sifted
▪︎ 125g all purpose flour, sifted
▪︎ 2.5 tsp baking powder
▪︎ 1/2 tsp salt
▪︎ 30g brown/caster sugar
▪︎ 110g butter, very cold & cubed
▪︎ 1 egg, cold
▪︎ 120g buttermilk, cold (see recipe notes for homemade buttermilk)
▪︎ 1 tsp vanilla extract
▪︎ 100g nuts of your choice (I used 50g chopped walnuts & 50g dried cranberries)
▪︎ 1 beaten egg or 2 tbsp milk (for topping)
INSTRUCTIONS
1. Preheat the oven to 200C & line a tray with parchment paper. Set aside.
2. In a small bowl, whisk together the buttermilk, egg & vanilla extract. Place the bowl into fridge to keep cold.
3. In a large bowl sift together whole wheat flour, all purpose flour, baking powder & salt. Add sugar & mix all the ingredients together.
4. Add cold cubed butter & work them together with your hands until the mixture is crumbly.
5. Fold in nuts & mix until evenly distributed.
6. Now pour the cold wet ingredients. Fold until the dough comes together. Don't overmix the dough.
7. Use your hands to bring the dough together into a ball. The trick is to work it as little as possible, but also get rid of any large cracks that will cause the scones to split as they rise. Flour your worktop & pat & shape the dough to form a 2.5cm thick square. Cut into 6 or 8 pieces.
8. Arrange scones to the prepared baking tray & brush the tops of the scones with beaten egg or milk. Refrigerate for 15 minutes.
9. Then bake in preheated oven for 22 to 25 minutes until nicely golden.
10. Serve warm or room temperature. Enjoy every bite!
RECIPE NOTES
Make you own buttermilk using normal milk & vinegar or lemon juice. Put 1/2 tbsp of lemon juice or vinegar in a measuring cup. Pour in milk until it reaches the 1/2 cup line. Stir to combine & let the mixture rest for at least 5 to 10 minutes before using.
