Altered Plates: Super Lucious Beany Brownies
Typically, Ill alter one recipe at a time, but this one is actually a re-styling of two recipes. I had been researching how to replace fat (or at least a portion of it) in baked goods with pureed beans when I came across a blogged recipe by Su Good Eats. Shed taken an insanely rich and intensely chocolaty brownie recipe from Epicurious and turned it just a scootch healthier by substituting pureed white beans for half the butter.

Marjorie's Chocolate Fudge Brownies with walnuts
Chocolate Fudge Brownies
325 degrees F. bake for approx. 1 hour
1 cup butter, melted
6 squares unsweetened chocolates
6 eggs
1 1/2 cup sifted flour
3 cup sugar
sugar for sprinkling on top
(optional) ½ cup walnuts, chopped
1. Chop the chocolate finely and combine it with the butter and slowly melt in micro.
2. Beat the eggs on high (start off slow) while slowly adding the sugar. Beat until thick and lemon colored .
3. Add the melted chocolate and beat till combined.
4. Add the flour and just begin the beating and then combine it better by hand.
5. Pour batter into the parchment lined 9x13 inch pan and using an offset spatula, spread the batter evenly thorughout the pan.
6. I run a knife tip through the batter t get rid of air bubbles in the batter.
7. Sprinkle the top with some nuts and some granulated sugar.
8.. Bake for 1 hour approx. until a toothpick comes clean when inseerted in the brownies.
9. Mark just the top of (create lines ontop to mark how large the brownies will be) the brownies with a pizza cutter right away after coming out of the oven. Then when cool cut the brownies the rest of the way and remove the brownies from the pan.
10. Store the brownies in an air tight containeer and these also freeze well up to 6 months.
