1 c Sugar 1/2 c Butter or margarine 12 oz Chocolate chips; divided 3 lg Eggs 1 1/3 c Flour 1 ts Vanilla 1/4 ts Baking soda 1/3 c Chopped nuts Recipe by: Nestle's Best-Loved Cookies Heat sugar & butter in saucepan over low heat, stirring until butter is melted. Remove from heat. Add 1 1/4 cups chips; stir until melted. Stir in eggs. Stir in flour, vanilla & baking soda until combined. Spread into a greased 13 x 9 baking pan. Bake in a preheated 350F oven for 18 - 22 minutes or until a toothpick inserted in the center comes out slightly sticky. Sprinkle with remaining chips & nuts while still hot . Cover with foil. Chill in pan until completely cooled. Cut into bars. -----

Typically, Ill alter one recipe at a time, but this one is actually a re-styling of two recipes. I had been researching how to replace fat (or at least a portion of it) in baked goods with pureed beans when I came across a blogged recipe by Su Good Eats. Shed taken an insanely rich and intensely chocolaty brownie recipe from Epicurious and turned it just a scootch healthier by substituting pureed white beans for half the butter.

Marvelous Brownies
1 cup flour
1/4 tsp salt
2/3 cup butter
2 cups sugar
3 eggs
2 (1 ounce) squares unsweetened chocolate, melted
1 tsp vanilla
1 cup chopped pecans
350 degrees F, 9x13 greased pan
Preheat the oven to 350°F. Lightly grease a 9 x 13 pan
2) In a medium-sized microwave-safe bowl, or in a saucepan set over low heat, melt the butter, then add the sugar and stir to combine. Or simply combine the butter and sugar, and heat, stirring, until the butter is melted. Continue to heat (or microwave) briefly, just until the mixture is hot but not bubbling; it'll become shiny looking as you stir it. Heating the mixture to this point will dissolve more of the sugar, which will yield a shiny top crust on your brownies.
3) While the sugar heats a second time, crack the 4 eggs into a bowl, and beat them with the cocoa, salt, baking powder and vanilla till smooth.
4) Add the hot butter/sugar mixture, stirring until smooth.
5) Add the flour and chips, again stirring until smooth. 6) Spoon the batter into a lightly greased 9 x 13 pan.
7) Bake the brownies for about 30 minutes, until a cake tester inserted into the center comes out clean, or with just a few moist crumbs clinging to it. The brownies should feel set on the edges, and the center should look very moist, but not uncooked. Remove them from the oven and cool on a rack before cutting and serving.
